Panini Sandwich with Creamy Pesto Sauce. A Panini Sandwich Recipe is loaded with all sorts of goodies, but the crowning jewel is the fresh creamy pesto.
A friend once told me she found it hard to make a good panini sandwich. She explained that the inside sometimes came out soggy, or that by the time she had pressed the sandwich long enough to warm through the center, the outside was too dark.
This puzzled me, because a good panini press is meant to make life a little easier in the kitchen. After further discussion, we discovered that she was using cold, wet ingredients (like tomatoes and olives straight out of the tub) and had set the temperature on the grill too high. After a little adjustment, she now uses her panini press all the time for sandwiches, as well as fish and grilled veggies.
It’s amazing how one conversation, or piece of new information, can change your perspective.
BigKitchen.com recently sent me a wonderful Calphalon Removable Plates Grill. Prior to this, my only hangup with panini presses and electric grills was how tricky they were to clean up. This one has certainly changed my perspective.
This Calphalon indoor grill is a cinch to clean. Both grill plates simply pop off and can even be placed in the dishwasher, along with the drawer in the back that catches grease and crumbs.
The top portion of the press is hinged to allow height adjustment for even cooking. That means you can place tall sandwiches, or thick-cut steaks in it without any difficulty. Also the preheat function is exceptionally fast. By the time you assemble your panini sandwich recipe, the grill is ready to go.
Today I’m serving a Panini Sandwich with Creamy Pesto Sauce. This pesto is a little different from the standard variety because it calls for less oil and is blended with cream cheese. The cream cheese provides a light silky quality and accentuates the basil, walnut and lemon. It’s easier to spread than regular pesto and makes a wonderful melty addition to any panini sandwich recipe.
How to make a Panini:
- Preheat the grill
- Butter the bread
- Load with dry, room-temperature ingredients
- Press to toast
That’s really all there is to it. I loaded these with black forest ham, genoa salami, artichoke hearts, sprouts and a good shmeer of creamy pesto. Heavenly!
Creamy Pesto Panini Sandwich Recipe
Ingredients
For the Creamy Pesto:
- 2 cups basil packed
- 2 tablespoons olive oil
- 1/2 cup chopped walnuts
- 2 cloves garlic
- 1/2 cup Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon lemon juice
- 4 ounces cream cheese
For the Panini Sandwich Recipe:
- 8 slices sour dough bread
- softened butter
- 16 slices black forest ham
- 16 slices genoa salami
- 1 can artichoke hearts drained and pulled apart
- 1 cup alfalfa sprouts
Instructions
- Preheat a panini press to 300 degrees F. Add the ingredients for the creamy pesto to a food processor. Puree until smooth.
- Butter 8 slices of bread, then flip them over and spread the creamy pesto on the opposite side. Place 4 slices, butter side down, on the panini press. Layer each with 2 slices ham, a small handful of artichokes leaves, 2 slices salami and the other slice of bread. Close the panini press and grill for 3-5 minutes.
- Then remove the sandwiches, open them up and add a handful of alfalfa sprouts. Press them closed again, cut and serve warm.

I would LOVE a panini grill! I love them, but only get to have them rarely, since making them w/o the press is hard. I used to work in a cafe (closed now) and we made turkey, pesto, roasted red pepper and swiss. To die for! I would love to have it again!

I’d probably experiment on new sandwich recipes. Anything with cheese would be good. I’d try something with peppers. I’d also grill my japapenos and tomatoes on this grill before I used them to make salsa.

Just came across your site through someone I’m following on Twitter. I would love to win this Panini press. Already thinking of the variety of panini sandwiches I would make. I bought a cheap one ($10) last year when I first got into making paninis. It’s not great as the one you mentioned above.
My favorite so far is with sauteed and seasoned spinach, onions, pine nuts with feta cheese inside naan. I love hearing the cheese sizzle and then when I open up the press I to see the grilled lines. Oooh, getting excited about paninis just thinking about that.
If I win the professional one, I can make more than one panini at a time and make a variety without waiting too much time.

I would like to try a banana and nutella panini on a sweet egg type bread like challah or brioche
I would make a steak torta sandwich with grilled thin sliced steak, avocado, tomato and fresh mexican cheese. I live in a mostly mexican suburb so some of the most authentic ingredients are literally available down the street. I use bolillo rolls for the sandwich which are made fresh in the mexican bakery. This is one of my husbands favorite sandwiches. Simple and delicious.
Buffalo chicken paninis would be great too.

I have a press now but a devil to clean because the plates don’t come out. I would make a crab salad panini with a spread made from roasted red pepper and hearts of palm and topped with a nice slice of fontina cheese. I grill the vegetables for the spread on the press too. I grew up eating grilled crab salad sandwiches with cheese at the local ice cream parlor and I decided that as an adult event though I have fond memories of the original I like my version even better.

Like you, I seldom use my press because the messy clean up. This Calphalon version seems to remove that obstacle. My favorite panini is nutella and strawberries on brioche!

Ooh that looks so delicious! Love the combination of the veggies and meats with the pesto, looks fantastic and mouthwatering. I would definitely make some panini sandwiches, maybe with some sun dried tomatoes, pesto, mozzarella, and nice thick crusty bread. Thanks! Yum, love pesto on paninis! I might have to go with an apple, cheese and chicken panini although in the summer, you never can go wrong with fresh mozzarella, basil and tomato!

No idea only because I have had one panini in my life so I would need recipes in order to pick up something good.
I love paninis!!! I don’t have a panini press so I’ve actually been using my waffle maker to make them :) My kids love how crunchy they are and my 2 year old loves poking his finger in the squares…

Please, please, please – i would LOVE to win this grill! We know go ‘old school’ when we make panni’s with a grill pan and a plate – taking turns to push down the sandwich before we get burned. It is seriously so pathetic! first thing i would make, hands down is a cubano….I just love these but my cooking method does not do justice! and to also grill fish??! If i don’t win – this is definately going on my easter wish list (why not, right??!)

Panini’s are one of my favs. I would have to make reubens they are the best.
I’d start with a Grilled Reuben.
I would make tons of paninis. We don’t have a real grill though so chicken and steak would also be made. Your pesto looks great. Pesto is always a must for me and my paninis.
Anything, I’m not picky, but probably something creamy with arugula!
