We have a “servings slider” tool in the recipe form. If you slide it down to set the potatoes at 3 lbs, all the other ingredients will adjust.

Made half recipe the first time for just 2 people. My fiancé doesn’t like sweet relish so I used dill relish. He loved it so much that the half recipe didn’t last 2 days. Had to make the whole recipe again after a week. I’m going to make it again for this weekend. Thank you for sharing this excellent recipe!

I’m 66 yrs old, so I’ve eaten my share of potato salad throughout my lifetime. That being said, your description being “The Best Potato Salad Recipe Ever” is SPOT ON. I absolutely LOVE IT. Kudos to you and your mom!!

Thank goodness someone was right about being the best. Every recipe you search for says ‘the best’…they can’t all be people!
Loved this salad. I’m used to mine being very bland with very few ingredients because that’s how MY mother used to cook, she couldn’t. lol
I don’t have store-bought relish because I make my own and right now only had a jar of sweet zucchini relish opened in the fridge so that’s what I used. Um, yum.
Also didn’t have a sweet onion lying around so I just used a half a small cooking onion and a few spring onion ‘greens’ both chopped fine and also a tbsp of my own dried, ground spring onion powder too. Sounds like a lot but I didn’t load the three on there.
I ground the celery seed, not too sure about getting a bite of a whole seed? I thought my 1 tbsp of ground celery seed may be too strong but you can’t even pick out their flavour after it was all mixed.
To keep things simple I used yellow mustard (because I’m still a chicken) but next time I’m going to take the dive with the dijon.
