How To Make The Best Potato Salad Recipe – Today I’m sharing our secret family potato salad recipe. My mom’s potato salad recipe is hands-down the best potato salad I, or anyone else who’s tried it, has ever eaten!

My mom’s potato salad is better than your mom’s potato salad.

There, I said it and I’m not taking it back! *wink*

Seriously though, my mother has magical abilities in the art of potato salad making. My mom makes traditional mustard, pickle, and hard-boiled egg potato salad. It’s simple, but I have never made or tasted another potato salad better than her version… And I’m not the only person to think so.

Over the years I’ve watched countless relatives and friends swoon over her classic potato salad.

The problem is, when you ask her for the recipe she has a hard time sharing it, because she doesn’t actually have a recipe written down. She makes it by feel.

It’s taken years of watching, assisting her, and asking questions to come up with what I consider to be her recipe.

Here’s What You’ll Need…

Making the most comforting potato salad, you need a few classic ingredients.

  • Yukon Gold potatoes or Klondike Goldust potatoes – or use Russets
  • Mayonnaise – your favorite brand
  • Refrigerated pickle relish 
  • Yellow mustard – or 1 part yellow + 1 part dijon
  • Apple cider vinegar
  • Celery seeds
  • Paprika
  • Hard-boiled eggs – peeled and chopped
  • Celery stalks – diced
  • Sweet onion – diced
  • Fresh chopped dill
  • Salt and pepper

How To Make The Best Potato Salad Recipe

1) The key to making the best potato salad is to use starchy potatoes and let them get really soft, so they are partially mashed once mixed. This gives the recipe a rustic, yet thick and luxurious quality. I like to use Yukon Gold or Klondike Goldust potatoes. You can also use Russet potatoes if you like. Do not use new potatoes, because they hold their shape too well and will leave the dressing soupy.

Start the potatoes in a large pot of cold water and bring them to a boil to ensure even cooking. Make sure to salt the boiling water so the salty flavor gets deep down in the potatoes.

Once the potatoes are soft, drain off the water and peel off the skins. You can leave some of the skins on if you like the added texture.

Chop the potatoes when they are soft; this saves time on the peeling and chopping.

2) Next, mix all the dressing ingredients together in a large bowl. Use your favorite mayonnaise as the base.

I know better than to tell you what brand to use… Mayonnaise is an intensely personal condiment!

Here in the Carolinas, we use Duke’s Mayonnaise, but mom usually uses Hellmann’s. You can even go with Miracle Whip if that is your favorite.

Mix a large amount of sweet pickle relish into the dressing.

Use the good quality refrigerated relish that tastes fresh, has large chunks, and stays firm. Otherwise, the dense ultra-sweet shelved variety might overwhelm the flavor of the dressing.

If you can’t find “good relish”, finely dice firm refrigerated sweet pickles instead.

Make sure to use yellow mustard for flavor and color. Sometimes mom adds half yellow mustard and half dijon mustard, but if it’s going to be one or the other, you have to use classic yellow mustard.

Apple cider vinegar, celery seeds, and a little bit of paprika round out the dressing flavor.

3) Mix the potatoes and the dressing while the potatoes are still warm. Add chopped hard-boiled eggs for richness, celery for crunch, sweet onions for a zippy bite, and fresh chopped dill for a herbaceous punch.

The onions are a point of discrepancy in our family… Personally, I would always choose scallions over any other raw onion. However my dad insists on raw chopped sweet onions for crunch and flavor, so that’s what mom uses.

To his credit, they do provide a more potent onion essence and crisp texture when served on the second or third day.

4) Finally, potato salad, any potato salad, tastes better on the second day after the flavors have had ample time to mix and mingle.

When possible, make mom’s this recipe the day before you plan to serve it.

However, if you don’t have time to make it a day ahead, refrigerate the recipe for as long as humanly possible before mealtime.

What Type of Mayonnaise Should I Use?

The mayo is the base flavor in the dressing so it is a very important ingredient. I find most people have a favorite brand. Go with your family favorite. If you don’t usually buy mayonnaise, Hellman’s is very popular, but Duke’s mayo is the brand of the south. *wink*

Why Sweet Pickle Relish?

Most store-bought pickle relish is sweet. I like to use the refrigerated kind that has larger chunks. It provides a better texture and the sweetness adds a lovely balance to the salad. If you hate the idea of adding sweetness, find a tart pickle relish or add chopped banana peppers. 

Can I Peel the Potatoes Before Cooking?

Mom always cooked the potatoes with the peels, then pulled off some (or all) of the peels after cooking. This allows you to leave some potato skins in the salad, if you like, for extra texture. Also, it elements the need for a vegetable peeler because the skins will pull right off after the potatoes are fully cooked.

However, if you do not want to incorporate any of the potato skins into the salad, you can peel them beforehand. It’s a matter of personal preference.

Is This Recipe Gluten-Free?

Yes, as long as the mayonnaise is gluten-free, the whole recipe is. (Most brands are, but double-check your jar.)

Can I Make a Dairy-Free or Vegan Version?

Of course! This recipe is already dairy-free. However, to make it vegan, simply buy a vegan mayonnaise and then omit the hard-boiled eggs. 

How Long Does This Salad Last?

Stored in an airtight container in the fridge, this salad will last a week. 

Can You Freeze This Recipe?

I wouldn’t. The thawing process will change the texture and the dressing will not be as creamy.

Can I Add Other Ingredients to Mix Things Up?

Sure! Try adding: bacon, rosemary, scallions, chopped banana peppers, shredded cheese, or sour cream.

How To Make The Best Potato Salad Recipe. My mom’s potato salad recipe is hands-down the best potato salad I, or anyone else who’s tried it, has ever eaten!

  • Cut the potatoes into quarters and place them in a large stockpot. Fill the pot with cold water until it is 1 inch over the top of the potatoes. Set the pot over high heat and bring to a boil. Once boiling, add 1 tablespoon salt and cook the potatoes for 13-15 minutes, until fork tender.
  • Meanwhile, in a medium bowl mix the mayonnaise, sweet pickle relish including juices, mustard, apple cider vinegar, celery seeds, paprika, 1 teaspoon salt, and pepper to taste. Stir until smooth. Then chop the eggs, celery, onions, and dill.
  • Once the potatoes are very tender, drain off all the water. Remove the loose peels and chop the potatoes into 1/2-inch chunks. It's okay if they are soft and crumbly. Place the potatoes in a large bowl. Gently mix in the dressing until it coats the potatoes well. Then stir in the eggs, celery, onions, and dill. Taste, then salt and pepper as needed. Garnish with fresh dill and paprika.
  • Cover the potato salad and refrigerate for at least 4 hours. If you have time to make it ahead, it tastes even better on day two! Keep refrigerated in an airtight container for up to one week.

  2. The only changes I made, doubled the onion, added a bell pepper. This was SO good! I used russet potatoes and Wickles brand sweet relish. I didn’t have fresh dill but dried worked fine. We loved it!

  4. I made this recipe as written with no substitutions or additions. Solid base recipe, however my husband and I thought it was a bit too heavy on the relish flavor. My mother however, loved it. I will admit, I was looking for a recipe that matched the flavor of my moms, unfortunately, this recipe didn’t quite get me there. – My moms potato salad recipe is my absolute favorite and has been passed down in our family. Unfortunately, I didn’t have access to it at the time so I decided on this recipe based on the stellar reviews. I am certain my taste buds are biased to the nostalgia of my moms recipe, so not discounting this recipe. If I did make this recipe again, I would use less relish, that’s it.   11. The heck you say Dukes in the South! I’ve lived in Georgia, SC and NC almost all of my 74 years and that Dukes dukie has never crossed my lips. Hellman’s is REAL mayonnaise.

  22. I never made potato salad before. I used your recipe as a base, and modified it for my taste. I used 1 cup mayo / 1 cup sour cream. I diced up dill pickles instead of relish, and used 1 tbsp of pickle juice instead of vinegar. I didn’t have celery seeds, but used 1 tsp celery salt instead of plain salt. I didn’t have paprika, and I left out celery and onions for simplicity and my own personal taste. The eggs I’m serving on the side, because my husband does not eat eggs, but I like them! I tasted it before placing in the fridge to cool…absolutely delicious. And I’m shocked I pulled it off. Thank you for this recipe. My mom recently passed, and took all the yummy food she used to make with her…she never measured. I need measurements. So I am building my own versions of all the food I love! This one is checked off my list!

  23. I like the flavor but in my opinion it is too much relish. I would recommend cutting the reliah down to half a cup.  I think it needs a little sugar too.

  26. Amazing recipe! Truly the best potato salad I’ve ever made and will ONLY make from here on in! I did make a few changes based on preferences: halved the onion, substituted half the mayo (Hellmans) for sour cream, and added a heaping tablespoon of sugar.   31. Amazing! I make it vegan by omitting the eggs and using vegan mayonnaise. It’s delicious–I usually make it the night before to let the flavors meld, but I always have a hard time not eating it all before then!

  33. This is a good potato salad recipe! The only change I would make in the future is cutting the sweet relish down by 1/3. As written the relish does indeed overpower all the other flavor profiles but some people seem to prefer that based on reviews. It’s an easy to work around solution for people who like less relish flavor.

I like this recipe, but I you do not need 2 cups of mayonnaise or even to sub that amount!!  Goodness, that would ruin it.  I only used about 1/3-1/2 cup of mayonnaise.  I also added a bit more Apple Cider vinegar because I like the acidity, and it needed more salt and celery.  I also added a tad more mustard than called for and did the 1/2 regular 1/2 Dijon.  Overall was really good!

  45. I have been making this recipe for the last year. It is amazing! My wife says I make too much for our family gatherings, but at the end of the day there is nothing left. That alone speaks volumes about this recipe, especially with my family of picky eaters.

    I have made one change to the recipe. Instead of 2 cups of mayonnaise, I use 1 cup mayonnaise and 1 cup of fat free yogurt. This is due to my wife’s intolerance to high fat foods because of a gal bladder issue.

I’m 66 years old and I had never made potato salad, but decided to go ahead and make it recently because my husband said something indirectly that made me realize I needed to step it up with some potato salad. Not only did I have a hit with this recipe, it was a grand slam! I made a half batch just not to have too much on hand, but that was a mistake. My family ate that down in 2 days – and there are no kids living here anymore – ha, ha! I’m always on a diet, so I think I ate about 1/2 a cup – he and a friend wolfed down the other 3 lbs and loved it.

    The one change I made was to dice up bread and butter pickles, rather than the pickle relish and that was a good suggestion. Thanks for the great recipe, because I’m back to make the full recipe this time and hope it lasts the weekend in a household of 2.

  76. Tried this for my boyfriend’s birthday dinner with his family. Everyone loved it!!! We are making it again this weekend just for us! First time trying to make potato salad and I will admit that I was a little nervous at first after tasting it while seasoning it before putting it in the fridge. Might have been the apple cider vinegar taste but after 5 hours of sitting, it was great! I did generously season it with paprika and pepper to our liking and used a very small amount of relish with the rest being chopped pickles.   86. Eh. There’s something off about this recipe. We can’t put our fingers on it though. In the notes, it says it’s better the next day. Both my husband & I said that we liked it more the 1st day than the next, though still, it wasn’t great. It’s not bad but we’re definitely still on the hunt for the perfect potato salad.

    • One thing to consider.. sometimes, the difference between an eh recipe and a great one is the salt. Or even a pinch of sugar. I have noted this with my family, when they say it’s “off”, next time more salt and then it’s “wow” haha!

  95. Great recipe, I didn’t have relish so I just skipped that part. I probably could’ve gotten away with diced pickles but it tasted great without and didn’t want to jeapordize the outcome. I, however, do enjoy a bit of a kick in my food so I did add about a tablespoon of chipotle chili powder and a couple dashes of cayenne to taste and it was phenomenal part of me doesn’t even want to let it rest over night lol. My biggest gripe though is the time to peel the individual chunks, next time I’ll probably peel before boiling. It took waaay too long.

  100. JUST made this!! It is absolutely STELLAR. We don’t have sweet pickle relish over here, so I used what I had on hand = sweet/sour pickles diced, and a mild (Dutch) mustard. I don’t think it will even make it to the refrigeration stage, as I keep “tasting” it? LOL

I made it for a special event but when I had heard about it I looked up this recipe because someone requested potato salad and I asked my neighbor Brittany if she had her mom’s recipe for potato salad her mom’s name is Sarah but she didn’t have the recipe so I used this recipe after my coworker Jared said he didn’t have his mom’s recipe so I made this recipe instead for the special event which was a house warming party for my son’s best friend but when I arrived I realized I forgot to bring the potato salad haha so I went home and got the potato salad out of the fridge and brought it to Waylon’s house and when I got there I discovered I forgot the potatoes! Next I went to the store to get potatoes and the cashier when I was checking out told me she forgot to put the potatoes in potato salad one time but do you know what she did? She hid the bowl of potato salad without potatoes until the guests left and she threw it out! I couldn’t believe my luck that day but overall it was a good recipe and I added jalapenos, cheese, cooked ground beef and corn syrup.

  102. This recipe is delicious! I JUST made this to bring to a neighborhood block party. I did have to make a few changes because our local store didn’t have some of the ingredients. I wasn’t able to add fresh dill (none in stock), I used dill pickle relish (only kind in the fridge section) and I used green onions in case people didn’t like onions (I love them and would use sweet onions for myself). They also didn’t have celery seeds, so I omitted them.

  106. Was pretty good, i wouldn’t say “best” but it definitely was a tastier one! I used red potatoes and used dill pickles along with a sweet relish, did a sample batch with the apple cider vinegar and celery seeds, and ended up ditching both. Way too much celery seeds for my liking, and the apple cider vinegar with the dill pickles made it too acidic. Ended up adding a bit of sour cream to make it a bit creamier and did scallions instead of the sweet onion (just preference) 
    All in all, turned out decent. Everyone had a serving so that’s saying something.

  108. I’ve made this several times. My SO and I, as well as anyone I’ve made it for think that this is the best potato salad they’ve ever had. This is my go to for pot luck type meals. Granted, not everyone likes complex flavors (or flavor for that matter), but if you do then you’ll love this. But hey, opinions are like a**holes, everybody’s got one. Mine is that I could eat all 5lbs for dinner.

    I didn’t care much for this recipe. My recipe is essentially the same but without the relish and apple cider vinegar, which I think ruins the dish. Too many competing flavours really take away from the already strong profile. To each their own.

  129. Just made this and it is already amazing without refrigeration! Used Yukon gold potatoes.  Kept the peels on while cooking and when I cut them them up if the peel stayed on so be it.  It gave it good texture.  
    1. Used Duke’s Mayo.  Added an extra 1/2 cup.
    2. Used Mt. Olive dill pickle relish so I omitted the vinager
    3.  Used mild German style mustard. So it had that yellow mustard flavor with a more creamy texture.  Added an extra tablespoon. 
    4. Added garlic powder and cracked black pepper to the Mayo 
    5. Used sweet vidalia onion. I food processed it to a mush!  Lol We have “texture” issues and are not huge fans of crunch in our potato salad.  I stirred it right in with the Mayo so we had a great onion taste that is not over powering.  
    6.  Omitted the raw celery…yuck!  Lol
    7. Used 7 hard boiled eggs
    8. Used a regular paprika in the mix, BUT topped it with a smoked paprika and the dill.

    Since, I’ve tried this recipe before, I decided to make again.. Thankfully, I had everything on-hand, except the celery seeds (which I’ve yet to use.. ever)…
    Of course, a test taste was done, and still Delicious, though Only 5 potatoes were used (remember, only a small portion was being made)…
    Currently, my salad’s ‘chilling’ up in the refrigerator… til the pork shoulder steaks & broccoli is done..

It’s the best I’ve ever had because it’s the only I have ever had, but it’s the only recipe I will eat from here on out. It’s so good! I would recommend 24 hrs of refrigerated time though!

  139. I make a similar potato salad. One thing you might consider is cutting in half about a cup of cocktail olives and throwing them in. Be careful not to add too many. You want one every 3 or 4 bites to give you an olive bomb taste.

  145. It’s indulgent and delicious, for sure.  Beats my mom’s hands down, but then, she was always on a diet! I love using Yukon Golds.  I was so happy to find the recipe when I searched!  No problem peeling after boiling (one reason why I love Yukons) and the texture was perfect.  Made 1/2 batch but precisely to recipe.  Love the fresh dill.  Would never consider anything but sweet relish here in Amish/Mennonite area of PA.  Hard boiled eggs are quickly done in Instant pot (peel easily), or as one clever reviewer mentioned, boil with the potatoes. Much better than what our farmer’s markets sell as potato salads.

  148. That’s a lot of celery seeds! (maybe it’s okay, I don’t know) Other than that, it looks spot-on. Miracle Whip won’t work as the base (it’s too sweet and too light) but if you use real mayonnaise and it tastes good but is a little too dry, you can use MW to loosen it up; it won’t take much. Most of my egg/chicken/potato/etc salads end up with a lot of mayo and just a little Miracle Whip.

    Do you think fried or poached eggs would work instead of boiled? I hate boiling and peeling eggs. I can’t think of a reason hard fried eggs wouldn’t work if you chop them up. Thanks.

    • They have boiled eggs that you can buy Already cooked and peeled normally where the regular eggs are

Yummy base recipe and good techniques!  Added garlic powder and horseradish powder (we like the kick!) and subbed out chopped dill pickles for the relish (we’re a more savory than sweet crowd). We used red onion (because it’s what we had on hand). Thanks for sharing! I halved it but next time would make a bigger batch. I don’t think it will last more than a couple of days :)

  152. I used dill relish instead of sweet (because, gross). Overall it was okay. I liked the texture a lot but it called for way too much celery seed. It was overwhelming. My guests seemed to have liked it but I could not stomach all the celery seed.

  158. Very similar to what my Mom used to make, too, though we always used dill pickles/juice vs sweet relish and vinegar! One trick I’ve learned over the years to hard boil the eggs is to (gently) scrub them and put them in the pan with the potatoes. They come out perfect every time!

    • Hi Nancy!

      You can peel them ahead of time if you like. I find peeling them after is actually faster and no tool required. The skins just pull right off. Also, some people like to leave some of the skins on for texture.

I made this at Easter and now again for a church potluck.  The flavors blend well.  I used both mustards.  I added chopped celery, scallions, and hard boiled eggs extra.  I added salt in boiling potato water but no salt in sauce, only pepper. Both batches were made with honey gold bite sized potatoes. (One bag 24 oz and I used 2 bags)
    This really is the best potato salad ever!

    I didn’t have fresh dill so I used dried dill.
     I also put in sliced sweet pickles.  I had to use Russets, but I love Yukons❤️. I used a brown spicy mustard and regular mustard mix. ❤️
    It taste so fresh and comforting!! Was a hit. 
    Next time I will use some of our canned cowboy (jalapeño) candy relish in place of SOME regular relish.  I don’t like hot, but enjoy the flavor and warmth. Thanks it’s a keeper.

    • First time making potato salad for a crowd. I loved the taste and textures of this recipe. However I didn’t like that I left the skin on the potatoes until after they were boiled. Unless you are going to leave the skin on in the salad I felt like a lot of potato was wasted trying to peel and cut once they were soft. Next time I’ll spend the extra time peeling before boiling. Will use the recipe again tho

  174. I was skeptical about the relish. So I added it a spoonfull at a time to taste and ended up using only about 1/2 cup. I don’t mind the tangyness of it but thought a cup would definitely overpower it. Perhaps it was the type I’m using.

I will probably tweak it a tad next time and try some smoked paprika and add more salt to the potatoes during the boiling stage. I also used chopped green onion instead of sweet for the pop of color.   193. Good recipe but I didn’t have all the ingredients on hand so I made some substitutions.

    #1 didn’t have potatoes so I used shrimp instead #2 didn’t have mayo so I used ketchup #3 didn’t have sweet pickle relish so I used horseradish #4 didn’t have yellow mustard so I used Worcestershire sauce #5 didn’t have apple cider vinegar so I used a few dashes of hot sauce. Overall still a good recipe with the substitutions.

        Just made this for Sunday Family BBQ. 
        Almost like my moms. I did not have relish but I did have bread and butter pickles. So I diced those up and use the juice instead of vinegar. I only had dried dill on hand but I had some fresh parsley I threw in as well. I struggle between the sweet onion and the green onion and went with the sweet onion and chopped fresh celery. I also added the diced boiled eggs. First time I’ve thrown the warm potatoes into the mayonnaise. It really did suck up the flavor. Very nice. I can’t wait to share it with my family, thanks.

  196. I made this today and against my gut feeling added the apple cider vinegar and wish I hadn’t. I can taste it in every bite. It over powers the other spices. I also omitted the onions per request of another person and substituted for onion powder. I think it turned out well but I wish I hadn’t added the vinegar. When I make other salads like chicken or tuna I add a little pickle juice which tastes great so I this might be fine, but I wouldn’t recommend it in potato salad. My grandma made the best potato salad and I wish I’d wrote her recipe down before she passed away. I will say this is pretty close.

  213. This is my go-to, bookmarked potato salad recipe. Easy and modifiable!  Sometimes I substitute the relish and vinegar for some bread and butter pickles & brine. Most of the time I add some old bay or Cajun seasoning in the end. No matter what, it turns out great!  Sometimes I’ll add more Mayo/seasoning mix the next day if it seems to need more moisture but it’s always delicious

  219. My potato salad is exactly like this one,but, I use half Hellmans and half really thick Western sour cream. Fresh scallions, fresh chives; fresh dill; Hungarian sweet Paprika. I also toss in a few off the grill roasted red peppers and one cup of roasted asparagus tips.
    Personally, I like to crank things up a bit. The key to taste is letting it ferment in the fridge for a day.

    • Loosely followed this recipe and it absolutely turned out to be the best potato salad I’ve ever had! Black magic?! Perhaps. I used a potato
      peeler on carrot instead of cutting celery because that’s what i had, and i was out of yellow mustard so I skipped all mustard altogether. So damn good. Excellent potato salad guide, but the photo aids in determining the amount of condiments for your dressing.

  232. This is a great recipe. The only thing I have changed and always change when it come to potato salad is the relish. Sweet pickle relish is just that, SWEET. I prefer dill pickle relish. It give mellower flavor vs sweet. Sweet is very dominant vs dill which gives flavor and is not over powering. If you have never tried dill vs sweet, you don’t know what you are missing.

I did cut the recipe in half since it’s just for the 5 of us and it still made plenty, plus leftovers! I know it by heart now that’s how many times I have used it.   240. This is an excellent potato salad recipe. I have made mine with the same ingredients for years. I do add an additional 2 tablespoons of rice vinegar to my dressing and I soak the chopped onions in the vinegars for 5-6 minutes to take some of the bite out. Sometimes I make this recipe with dill relish for a more sour salad and sometimes with sweet relish when I want it on the sweet side. Yummy!

  255. Honestly the tastiest potato salad I’ve ever had! I changed and added a couple things: instead of apple cider vinegar, I used balsamic vinegar. I added about a half cup chopped red pepper and another couple tbsp of chopped fresh chives along with the French dill. I left out the salt and pepper (except for generously salting the water to boil potatoes). It was sooo good and I received tons of compliments!

(It has high fructose corn syrup, so I will look for the good stuff when I’m in the city… OR, make my own!). Also used FOUR small farm fresh eggs. Next time I will use a little more mayo and pickle juice as it is very thick with all that egg, haha. But still totally delicious. This is a keeper. Thank you!

    Next time around, I’ll add an extra teaspoon of Mustard and a little more sweet relish. I like it just a hair sweeter. Excellent recipe to start with and modify to taste.

  269. I made this yesterday and followed the recipe as best as I could. The store I go to doesn’t carry the Claussen refrigerated relish (I LOVE Claussen pickles, btw), so I got Vlasic (🤮) whole sweet pickles and cut them up. Oh, and the store didn’t have Yukon gold potatoes, so I used red potatoes, and I used Best Foods Mayo (no Duke’s or Hellman’s in California). I made it sort of late in the day, but it was in the fridge for 4 hours like recommended.
    I wasn’t super impressed with it last night (I don’t really like sweet pickles, and their flavor was coming through overwhelmingly, plus, I had to add more Mayo cause it was kind of dry), BUT after being in the fridge all night, it’s pretty damn good today.
    Seriously though, better than store-bought! (Ow, I just hurt my arm patting myself on the back). I don’t really taste the flavor from the celery seeds, but they add a fun element to it, and I didn’t have to add any more salt (and I LOVE salt) for flavor, pepper is a different story (you can ALWAYS use more pepper!).
    Although, next time I make it (and I WILL), I would sub the relish/chopped sweet pickles for chopped up regular Claussen pickles (my hubby says sweet pickles/relish might be a regional preference), and I will definitely make it the day before to let the flavors marry

Personally, I used regular dill relish (not sweet), no onions or celery/celery seeds, and ADDED 10 strips of crispy bacon. My friends ask for it every time they come to visit.       You can add anything you like! I suggest starting by making the recipe as-is. Then taste it and see if you would like to add corn, sardines, or something else. I always recommend starting with just a little of a new ingredient. Then add more to taste, if you like.

  285. My wife and I made this together — with these minor variations:
    1) We measured out 3.3 lbs of potatoes to scale to available bowls and fridge space. We adjusted the other ingredients to yield a little extra of the Mayo mixture, relative to the potatoes. Then we added most of the Mayo mixture to the potatoes, and gradually added more to fine-tune the consistency to our liking. 
    2) We used a combination of sweet pickle relish and diced sweet gherkins. We didn’t have enough relish, and needed to supplement with the gherkins. That worked out well — dampening the sweetness of the relish and adding delectable bits of gherkin to the mix.
    3) On my servings, I substituted a sprinkling of cayenne for the paprika.
    This is a GREAT recipe!  Can’t wait to make it again.

My mom and grandmothers would be sad to hear that I’m saying this after growing up on their amazing versions, but this ones really special. It’ll be my new go to. The only addition I made was grating a medium carrot to add color and more variety, oh and I also omitted the egg and used vegan mayo as we’re all vegan in my house. I suppose you’re one of those naive millions of people who believe ‘Sweet Tea’ is a great thirst quencher, too, eh? Use Dill Pickles Inly – Always! At least you are ½ right about the mustard: but use Dijon only – think Deviled Eggs. You also messed up on the paprika: for this large of a recipe you should use at least 1 tablespoon and ½ or more of that should be smoked paprika.

I have personally made this recipe EXACTLY as directed and it was a HIT at every party so far. I’m talking empty bowl, guests looking for more kinda hit! There is NO comparison to store bought as you suggested to others in response to their comment. This is far superior. And there are 421 that’s FOUR HUNDRED AND TWENTY ONE comments here, so your theory about her weeding out low scored comments doesn’t hold water. I’m also aware the author didn’t ‘suggest’ to use Miracle Whip – the mere fact that she approved it as a substitute disqualifies her legitimacy: Miracle Whip is NOT an option – ever! Also, store bought ‘can’ beat homemade especially if you choose to use sweet pickle relish – nasty. You say your guests empty the bowl every time? Well, set out two bowls – one with sweet relish and one with dill pickle and see which goes first – thank me later.

      • I made this potato salad today and, of course, taste tested it. Even without letting it set, it is delicious. Some people claim to be some sort of connoisseur. Seems as if a chef would know that adjusting recipes to suit personal tastes is done all the time and in no way means that the original recipe was somehow “less than.”

    • Just because you prefer dill doesn’t mean others don’t like sweet relish. There is already dill in the recipe and the sweetness combined with the vinegar is just right. Also, I use sweet relish in deviled eggs and they never last at parties.

  343. So, this recipe is amazing. I’ve made it several times now and it’s been my go to all summer long. The thing I do differently is that I peel and dice the potatoes and place in a steamer basket and place the eggs on top and cook in my Instant Pot for 4 minutes on high pressure with quick release. I mix up the dressing as written while it’s cooking and add potatoes once done & dice the eggs! Great every time. I might add a teeny bit more mustard too, but that’s just personal preference.

The only changes I made were slightly more yellow mustard because my hubby and I both love a little extra, an additional boiled egg (we love that too), and most importantly ( this is crucial), Tony Chachere’s more spice seasoning. We live in south Louisiana and we love some extra spice. The addition of Tony’s made a huge difference on the flavor layers. Excellent stuff!!!

    • This potato salad is so doggone good. The only differences I made to it was to pan crisp (a really good crisp) and brown my unpeeled baby red and yukon potatoes in a little butter and seasoned with paprika and garlic powder. Also, I didn’t have any celery or sweet relish. But I used a some chopped dill pickles. Me and my 11 year old son love potato salad so I am always trying different ways to make it. He said it was so good that it is like hugging your mother, lol. I can’t wait to do it again with all of the ingredients. This is a keeper. Thank you.

  365. I just made this for a soccer game watch party happening this afternoon. I wish I had made it yesterday but, oh well. I was tasked with making it this morning so I didn’t know ahead of time.

    I think this is a good base recipe but it’s a little bit bland on its own for me. I think its probably fine for most folks and for anyone who doesn’t like things too spiced, and I don’t necessarily mean hot/spicy.

    I added a tbsp of turmeric for color, a couple tbsps of wasabi mayo, tripled the amount of paprika, added a tbsp of cayenne. I used a whole sweet onion AND and an entire bunch of green onions And a few tbsps of Montreal Steak Seasoning. Those additions blended well with the base recipe.

  381. Outrageous!! Sets a new standard for potato salad. While I don’t measure, I used everything you suggested. Had a couple of old baking potatos. I found a sweet relish we like at Walmart of all places, Great Value brand, it is really very good and dirt cheap (price is nice but we don’t consider it usually regarding food).   382. I know you state using Yellow mustard, but I grew up in Upstate NY and Weber’s Horseradish mustard is a great ingredient if you like a bit of kick.

This is a great recipe.  I did have to make a couple of changes because of the ingredients I had in the house:  I only had Idaho potatoes and no celery seed, but had celery salt so I used that and left out the salt in the recipe.  Maybe it’s the wine vinegar or the 1/2 yellow and 1/2 brown mustard – but this recipe is a hit!

  402. Made this to go with dinner tonight. What I did different, I used dill pickles with some juice for the relish. I then used pickle juice for the vinegar. Only used one stalk of celery finely chopped, and finely chopped the sweet onion. Also used russets because it is what I have.

  404. I used to wonder why my potato salad never turned out and I hated eggs in my potato salad, well gee, what binds everything together well are the eggs. I tweaked this recipe a bit, as 5 lbs of potatoes is quite a bit for a party of 2. I also used a small shallot instead of the onion and a finely diced dill pickle as my taste buds prefer sour than sweet. I definitely would not use russet potatoes as a waxy potato is best and holds it’s texture well. Also, your preference of mayonnaise makes it or breaks it. The creamier the better. Some fancy mayonnaise brands just don’t hold up well enough. Thanks for the recipe:)

  406. I’m 43 years old and I have NEVER made potato salad before. We had out-of-town guests (a family of 6) in town and I decided to pick a recipe online. I found this and it was a massive hit. So tasty and fresh and the kids loved it. 

  407. This was a big hit on Father’s Day. I used 1cup mayonaise and 1cup greek yogurt instead of all mayonnaise. Originally, everyone said they didn’t like mayonaise.   423. This is the BEST potato salad recipe ever. My family loves this so much that I am making it regularly during the hotter days-it is the perfect side for any summer dish. I added a cup of chopped bacon, and substituted the 1 cup of sweet relish with half a cup of chopped dill pickles and the half a cup of sweet relish, it was so delicious and everyone loves it. In the past I never knew exactly how mush mustard, mayonnaise, relish, & hard boiled eggs to use. The balance of measuring this recipe was key for me.

  428. Has anyone cooked the potatoes and eggs in an instant pot? If so, did it turn out well? And for how long? 

    • Yes! Put the trivet that comes with the instant pot into the bottom of the pot, add 1 cup water. If you have a steamer basket, that would work too, but I don’t so I fold a piece of foil to a circle, and punch small holes in it. Place on top of the trivet, then fill with peeled and cut potatoes. Nestle the uncooked eggs into the potatoes at the top, put on the lid and seal. Set for Manual and cook 4 minutes. Quick release when done, remove eggs and put into ice bath until cool. Potatoes should be done and ready to mix the other ingredient into!

  431. Wow – this potato salad tastes AMAZING. I read through many of the comments. I like vinegar and tang – so I added 3T. apple cider vinegar, 1.5 tsp sugar, 1.5 tsp salt. I used scallions instead of red onions.

    At first I was weary of the mayo and relish like some ppl said.. so I started w/ 1 cup mayo and 1/2 cup chopped up bread/butter pickles (all the relishes had high fructose corn syrup). But it was the tiniest bit dry.. so I added the rest (another cup mayo and another 1/2 cup pickles + juice).

    It tastes VERY good. I think I could add more vinegar, salt, and pickles; but I’m going to see how it is tmrw and tweak as needed.

I’m not a fan of sweet pickle relish so I only used half at first but then ended up using the whole amount that the recipe called for because the sauce tasted great.   446. Tried this recipe for my first time making potato salad, and everyone loved it!!!!! I’m already on my 2nd batch in 3 days. I used Dill relish instead of sweet, doubled the amount of hard boiled eggs, and used 2-3 tablespoons of fresh Dill. I mixed 1/2 in and put the other half on top.  

  447. I really hope my mom doesn’t see this. I’ve been eating the same potato salad for the last 47 years and it’s very good. This is better. I went with the Hellman’s mayonnaise even though I normally would use Miracle Whip and I halved the recipe as there’s just two of us eating it. I split the mustard half and half between yellow and stone-ground and I replace the diced onion with a healthy sprinkle of onion powder only because if I eat raw onions that’s all I can taste. If there’s a recipe that looks good, but has too much of something – or an ingredient I don’t care for, then I omit it – or add less or more of something that suits my taste. Again, not trying to be demeaning; just giving a simple tip. I’m sure you could make it again with less mayo and relish with fantastic results.

I made  this twice.  First time, we only had 3  pounds of potatoes and didn’t measure the ingredients.  It was okay and showed promise for my second attempt.  On my second attempt, I used the proper measurements, but substituted russet baking potatoes.  It turned out GREAT!  And, know that you will have a LOT of salad when done.  Ours weighed in at 7 pounds 10 ounces.  This is a super receipe, and if you follow it,  you will have a very tasty and satisfying dish.

Tip: the potatoes will continue to cook so really stick to the 13 minutes suggested if you want crisp potatoes in your salad. One more pro tip: I purchase store-bought, pre-packaged hard boiled eggs. One less step and they are just as good in my opinion.

I made this and could have eaten the WHOLE bowl by myself. I did use yukon potatoes, because I prefer a firmer potato salad. Russets are better for a Baked potato salad. I didn’t have relish, so chopped bread and butter pickles. I did prefer the apple cider vinegar (vs white distilled–nice switch) and of course French’s yellow! Just perfect.   501. This is pretty much how I make mine too with a couple twists. I use both zesty garlic dills cut up and sweet gherkins cut up as it adds a great dill/sweet note and crunch. I also put in juice from pickles. Sometimes will use the dill juice sometimes sweet pickle. I do add garlic/onion powder too. That’s what I love about great recipes. You can add/subtract/ change it up or stick strictly to it!
    I also sometimes wondering about the best ways to use the bbq grillware to make sides at a barbecue! Will definitely have to try this!

  502. As usual, I am making a potato salad to use up 4 older russet potatoes because the eyes are starting to grow. Of course, I cut them out. I also threw in a half dozen different types of small potatoes that came to about 2lbs. This Website’s servings calculator came in handy.
    The only other deviations I made from your recipe were using some sour cream with the mayonase and half dill pickle with the sweet pickle.
    Tastes yummy already even before cooling.

I used chopped up bread and butter sweet pickles with the juice instead of the pickle relish, omitted the celery seeds as I didn’t have any, mixed 1/2 cup light miracle whip with 1 1/2 cup light mayo to give a little more tanginess, and a little extra chopped dill. Used 4 boiled eggs, could have added another.

  511. This is how I have always made my potato salad too. Then only difference is I coat the potatoes while they warm with a little bit of butter then I add the eggs, celery, onions and dill and cover over night letting the flavors meld. The next day I add dressing and relish or sweet pickles or bread and butter pickles. I find it adds an extra subtle flavor to it. Also the dressing doesn’t make the potatoes mushy. 
    Looking back over your recipe the other differences is I cook the potatoes in their skins and peel while hot. 
    I know this recipe is excellent I have been serving it for over 35 years! Good job!!!

    • I couldn’t find the refrigerated relish so I used regular sweet relish. I’m not sure if it is more potent than the refrigerated kind, but the sweet pickle taste is overpowering the potato salad. I added two dill spears and a little more mustard but the sweet pickle is still the dominant flavor. Any suggestions on how to mellow it?

Also, I stirred in a couple of tablespoons of vinegar separately to the potatoes while they were cooling. This helps them absorb more of the flavor. But, just to prove that you can teach an old dog new tricks I followed your  recipe more or less exactly because it really sounded good. I did soak the onions in dill pickle juice as recommended by one reviewer because I usually soak onions in ice water for 20 minutes or so if using them raw. It really does mellow out the bite especially with red onions. I also used plain yellow mustard- no Dijon. Well, the potato salad is absolutely delicious! It’s in the fridge now for tomorrow night’s cookout and my family will be so surprised that I’ve changed it up.  Thank you for a wonderful recipe!!!

Here are my suggestions and how I tweaked it that knocked my socks off because all of us sitting out here think they know how to get an A +….heh? 1) Drop what you’re doing and actually go to the market and buy Celery Seed and buy Apple Cider Vinegar and don’t substitute….!!! These two ingredients make it spectacular – so don’t be crying on here later wondering when something went wrong. You’re nothing but a lazy low life without a chip in the game if you miss this step. Whew! 2) I went with peeled red potatoes the last 6 times I made it and found it didn’t break the recipe. 3) Stick with 100% Yellow Mustard no Dijon mix. 4) It’s OK to be a little heavy handed on the Apple Cider Vinegar and Paprika….wink, wink. 5) Finally, hate to loose some of you…..Never been a fan of the Dill…..so I left that out. Apologies to Mom. (an extra celery stalk or an extra egg won’t get you killed, I promise….)
    Tasting it warm will vibrate your taste buds leaving you on the verge of euphoria. Waiting the next day, stirring and tasting will have you pumping your fists all the while doing your touchdown dance. Enjoy…!

I did learn one tip a few years ago that i added: chop the onions (I like vidalia or purple) fine, then soak them in pickle juice for a while, drain, then add. It takes the raw bite out of the onion but keeps most of the crunch and adds a nice dill flavor to the potato salad. All this makes me hungry!

    • Hi Patty – Just decided to chime in here on my own. I could not fathom trying to peel after they’ve been boiled. I’ve always peeled first and then boiled. It’s worked every time for me. Just an F.Y.I.

    • My mom always boiled then peeled. In fact, she liked to peel them while they were hot. So I have followed her method with one exception. I boil mine with the peel on then refrigerate overnight to cool them so they are easier to peel.

      I just find it’s less work to pull them off after cooking. And it also gives you the option to leave some in if you like the texture.

  551. Has anyone tried using  chopped dill pickles with this recipe?  My family prefers dill over sweet and I was hoping it will still taste as delish. 

    • I only had 1/2 cup sweet relish, so I substituted finely diced dill spears for the other half. It came out great.

    • Hey Lisa! Just used chopped petite kosher dill pickles yesterday when making this recipe – turned out amazing! My family also prefers dill over sweet pickles. I also added a tbsp. of the pickle juice to make up for the lost sweet relish liquid. I read these comments beforehand and also used the one tip I saw for soaking the chopped onions in pickle juice (3 tbsp) for 1/2 hour before adding them to the salad.

    • I like your recipe since it rivals my own. However, I too have received rave reviews for my potato salad. I also boil the potatos with the skin and peel when cooled, I omit vinegar and celery. I use red and green bell peppers, onions, eggs, small leaf parsley, mustard, mayonnaise, India pickle relish, paprika , salt and pepper and my special ingredient of Wishbone Thousand island dressing. Mix all the wet ingredients in a separate bowl and then add to the vegetables and eggs mix everything together and chill it before serving

  559. I made this potato salad for the 4th of July and it was delicious. Not too sweet, not too salty. The onions and celery provide a nice subtle crunch, while the hard-boiled eggs enhance the creaminess of the potatoes. My supermarket didn’t have Yukon Gold potatoes, but they did have Baby Dutch Yellow Potatoes which I used as a substitute. I quartered the baby potatoes and left the skins on, which contributed a lot of texture to the salad. I’ll be saving this recipe for future use!

  568. I just made potato salad and then found your recipe. Mine is almost the same and is really good. While the potatoes are cooking I chop a cup of velveeta cheese in the bowl and put the hot cooked potatoes on top to melt the cheese. In the dressing I use the pickle juice for the vinegar and add some heavy cream so the salad is not dry. Thanks for sharing your recipe. Carolyn

Like others have said, it’s very similar to my mother’s recipe (except she always used Miracle Whip and didn’t use the paprika). Next time I will try the 1/2 & 1/2 MW-mayonnaise idea! So yummy.

  572. Some people will eat anything. Look at all the ready made potato salads in the stores. That are not edible. Often, the old fashioned is the best, and that’s what I recommend. Also the simplest is often the best when it comes to food, instead of the contrived, everything but the kitchen sink approach. I’ve made potato salads for years, even 15 pound ones for big occasions. And I’ve had people point at mine and say, “That one!” And return again and again. It’s because I keep it simple. I cook the potatoes–russet– in the skin the night before, or not, and lay out to cool. ( Start in cold water, bring to boil, and simmer ’til just done. Don’t cook until they fall apart.) In the morning they are easy to peel by just scraping the skins off with a paring knife. Dice them into a bowl. Add sweet red onion–diced– (that’s the ones that are flat–not the round ones. Hard boil eggs, Add them cut up. toss together. Add salt. Add a good mayonnaise. I use Best Foods, in the West, same as Hellman’s in the East. Use plenty. Refrigerate if waiting to serve, but remove from refrigeration early enough to get to room temp. It’s better. But don’t ruin it with vinegar, pickles, mustard (ugh) or other gunk like French dressing. If you must, celery wouldn’t hurt it, nor would canned pimentos. In fact it’s fine. But that’s it. I know others who advocate the same simple recipe, but not many. Most start out well, and then ruin it when they start adding other stuff. Best Food ought to know this too, but I think they add mustard, and I can’t believe it. Try a little one like mine first, and you’ll see.

      Second, to someone like me, yours sounds absolutely disgusting. No mustard in a potato salad is weird as hell. So basically, potatoes swimming in bland mayo. Gross and no thanks. The one here sounds perfect. You should peddle your recipe to people who don’t like mustard or any other thing that adds flavor. Which is no one I’ve ever met. Sorry not sorry.

  579. This is very similar to my grand mothers recipe.
    As a young man, I was only interested in eating not learning how to cook so have had to learn to recreate her cooking from my 67 year old memory.
    It took a while until I recalled her chopping up her homemade “bread and butter” pickles.
    While this recipe is likely quite good on its own merits, the only way to make potato salad is to not use sweet pickle but to use bread and butter pickles.
    I find an off brand next to the name brands that look,like my grand mothers pickles.
    I will stack her recipe up against any.

    • I made this the morning before a family potluck and realized I didn’t have any celery, so I left it out. Lightly sprinkled it with celery salt, but not much since I’d already added salt. It was still delicious, I got compliments and some folks took a bit home in containers. I think the crunch would round out the texture but leaving it out still produced a winning dish.

  618. This is my grandmothers potato salad recipe. I make it exactly like this, sometimes you can add chicken breast instead of eggs or both. People cannot make potato salad like this, the secret is the vinegar and relish. By the way my grandmother is From the Philippines and she was born 1915.   621. OMG. Delicious. Small change that was better suited for my preference. I used Dijon only and a smaller amount, just maybe a teaspoon of relish, a teaspoon of sugar. Didn’t have celery seed so I used a small amount of celery salt. Only made half the recipe with the other ingredients. Really good.

      • You might be boiling your potatoes too long. Also, try adding the sauce mix to the potatoes slowly and only until it suits your preference. Just a thought!

  622. I love to make different potato salad recipes. I have learned to boil or bake the potatoes whole. That way the flavor stays in & doesn’t get watered down. They are easy to peel & chop after they have cooled. I don’t like sweet relish, so I use dill pickles finely chopped. I like Dukes & Best Food Mayo & of course yellow mustard. I use more eggs & will add sliced black olives. Haven’t tried adding bacon.

It reminds me of the potato salad that one of my aunts used to make for family get together’s and it was something I always looked forward to. My previous comment lists some of the modifications I made to it, but it is essentially what was in the original recipe. I did halve the recipe since it was only for my wife & I, but this will be my go to recipe from now on.

  639. I liked the sound of this recipe so decided to try it out to serve with a smoked pulled pork that I’m going to make in a couple of days. I halved the recipe & chopped up a quarter of green pepper that I had in my refrigerator. I’ve mixed the dry ingredients with the wet ones, diced the celery & onion, boiled the eggs, and placed everything in the fridge to cool down. Later today I’ll boil the potatoes and then mix everything together. This will give the potato salad a couple of days to meld all of the flavors. I did taste the mayonnaise mixture and it tastes wonderful. I didn’t have sweet relish so I used some dill pickle relish and I think it works well. I’ll let everyone know how the finished product tastes in a couple of days.

      Do you have sweet pickles or “bread and butter” pickles available where you live? Sweet pickle relish is essentially sweet pickles diced into tiny pieces. Some relishes have diced pimento added in, but they are not necessary.
