We definitely recommend using crackers if you have them. Adding crushed crackers is an old-school method to add more flavor than plain breadcrumbs. Plus, it’s super handy for using up that package of crackers you’ve had sitting in the pantry for weeks.

Here is everything you need to make the best homemade hamburger patties:

  • Ground chuck – We prefer an 80 lean/20 fat ratio for the juiciest burgers.
  • Crushed crackers or Panko bread crumbs – The best binders for juicy hamburgers. (Could be gluten-free!)
  • Worcestershire sauce – Adds a deep beefy, smoky flavor.
  • Egg – To bind all of the ingredients together without drying.
  • Milk – The enzymes help to soften and tenderize the ground beef.
  • Seasonings: Salt, Garlic Powder, Onion powder, Pepper, or other spices of choice.

It’s helpful to save prep time and add lots of flavor to your patties by adding dried spices rather than fresh herbs to the hamburger mix. How to Make The Perfect Burger Every Time

It seriously only takes mere minutes to make restaurant-quality hamburgers from scratch. Prep your workspace and ingredients before getting started and you’ll be whipping out hot plates from your home kitchen (or backyard) in no time!

Here’s how

First, set out a large mixing bowl and add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, and spices.

  • Use your hands to thoroughly combine until the mixture is very smooth.

Next, press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 – 1/3 pound grill or skillet patties, or 12 thin griddle patties. Like so:

Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties of your desired thickness. You typically want hamburger patties to be slightly larger than the buns they’ll be served on since they’ll shrink a bit in the cooking process.

Place the formed patties on the baking sheet. With thick patties, press a dent in the center of each patty, so they don’t puff up while cooking.

You can stack the patties with sheets of wax paper between layers if needed.

Then, preheat the grill or a skillet to medium heat, approximately 350-400 degrees F.

  • I love using a cast-iron skillet for getting that drool-worthy caramelized sear on the burgers.

If you substitute regular dried breadcrumbs for the crackers or panko, reduce to 1/4 cup. They are denser and will create a “meatloaf texture” if you add the regular amount.

  29. These are very tasty burgers. I have added egg/crackers in before with some of the seasonings but never thought of milk. Sort of winged the proportions and also added a little liquid smoke and creamy horseradish for seasoning. Due to weather, I pan fried these in cast iron skillet. Good tip on the need to get the pan up to about 400 to get the drool-worthy caramelization. I will definitely try variations of this recipe again and again.

  39. HELP! This is my first time making homemade burgers. I tried this recipe tonight and it didn’t turn out. Smelled good and tasted good (which I suppose is the important thing), but the patties didn’t want to form right. The mixture was kinda sloppy, barely held together to get them in the pan, but then developed cracks and fell apart when I flipped them. I did realize I made the patties too big and their weight worked against them, but even besides that something wasn’t right. How do I get them to hold together better? Does the meat have to be 100% raw when I put them together? I defrosted in the microwave and some of mine had started to cook by the time I got to mixing.

    • Hi, arrowroot powder is a brilliant binding agent. Don’t put more than 2tbsp and perhaps reduce the breadcrumbs slightly. Hope that helps.

      Yes, I would say the issue was the pre-cooked meat. For any good burger recipe the ground meat must be raw, so that the other ingredients blend evenly into the meat before cooking. Hope this helps!

    I just wanted to swing by, and say thank you for your time & effort in providing this useful & actionable content. I was surprised to see your basic seasoning(s) are identical to was I use in all base Angus ground beef, no matter if used for burger’s, taco meat or spaghetti; it rely brings out the best flavor. Foray, since I am here, I will toss in a small suggestion to try sometime. Whenever I cook bacon, I save the bacon grease, ( aproximately 5oz or 141g ), and freeze it in a repurposed glass jelly jar; then when needed, ( multiple purpose ), for these burgers, I put on or about 1/4 – 1/2 TBSP down on the pan, and apply the same on top as cooking for once you flip. It also seals the juice inside the beef, and just adds a hint of depth to the flavor, ( without the additional cost of adding bacon ), and if your OCD at all, like 25 years in the military helped me to be; I will give fresh pepper corns a twist or two in the melted grease, ( heated oil & pepper changes the taste. Also, I got in the habit of using LAWRY’S Seasoned Salt in the meat; so a small pinch of Morton Iodized Sea Salt in with the fresh ground pepper corns and grease doesn’t hurt either. Thanks again; your process, step by step by the numbers is delicious and foolproof.

  46. I’ve made all kinds of labor intensive and fancy hamburgers in the past but always adventurous to try new recipes. I’m so glad I did. This simple recipe was absolutely delicious! I did grd beef last week, went right by the recipe. Today I decided to try turkey. Since grd turkey is so wet, I did add a little more cracker crumbs, 3/4 cup. Also to add extra flavor to the turkey I did ‘heaping’ teaspoons of the garlic & onion powder and lastly did heavy cream instead of milk, since turkey can be dry.   49. I don’t eat burgers much and they generally didn’t hold much appeal for me, but I wanted one today and decided to look up a recipe this time. The burger I just had totally changed my perspective on them. It was wonderful. There were a lot of ingridients I didn’t have so I loosly followed the recipe (beardcrumb and sourdough cracker for saltines, 1 lb of ground beef blend wiht liver and heart, koji and lime instead of worchestire and milk) but it turned out so well.   58. I made these as per the instructions, plus I added some dehydrated onions to the meat mixture. I cooked them in a cast iron skillet and everyone came into the kitchen to see what I was making because it smelled so good! It smelled like burgers on the grill from a good restaurant! They came out perfectly seared and so tasty! Also, I learned a trick over the years to ensure the middle gets done, for those who don’t like a pink middle. If u make a little depression with your thumb or two fingers in the middle of the patty on one side, it makes the middle thinner so that it cooks evenly. Personally, I don’t mind a little pink but many people don’t like that and it’s safer to just cook it through.

  65. I made burgers last night for my family using this recipe and they were excellent. I’m keeping this recipe to use again. The only substitution I had to make was for the saltines/bread crumbs which I didn’t have. I used some whole grain crackers that had seeds and ground them up and they worked just great. All the flavor and texture was so good and way better than plain beef!

  73. These were so good! I followed the recipe exactly, minus for using ground beef and I cut the ingredients in half and got four burgers out of the 1lb ground beef. I used the cast iron for that perfect carmelized crust and used about 1/2 tbs of unsalted butter to dear the burgers in for carmelization. Seasoning mix was perfection in the meat and topped with a crispy bun, pickles, ketchup, mustard, and onion. My only regret is not making more and going to bed bitter at my friend for taking seconds so I can have more for leftovers haha!

  98. I personally like this recipe (except the onion powder). When making burgers on a grill for a picnic with a crowd, many people do not like the zing of Worcestershire sauce or garlic added to the meat, and they do not like an onion flavor being put into the meat itself or the level of salt/pepper or other spices. Adding the bread crumbs or crushed crackers to the meat necessitates the milk – both unnecessary – your making meatloaf at that point. The point of a hamburger is simple – meat, egg to bind and provide a variety of toppings and shakers of seasonings to let everyone adjust to their taste. Simplicity of the burger itself and diversity of condiments offered is the key to a great time had by all.

      Absolutely! You can make the patties ahead of time and freeze them on a baking sheet lined with wax paper. Then stack the hard patties and freeze them in a zip bag for up to 3 months.

I just put this burger recipe together but I only had a 1 lb ground chuck pack so I cut everything in half made my four nice fat patties and they’re in the refrigerator waiting for my wife to get home I’m going to cook them on stove top at about 6:30 tonight in a cast iron skillet they’re going to be amazing corn on the cob and barbecue beans

  152. Delicious! I didn’t have an egg so I used 1 tbs mayo. Also didn’t have any hamburger buns, so when I read about adding dill (which I happen to have, strange) and parsley to give it a Mediterranean flavor, that was enticing. I formed the patties oblong for some reason (seems more Greek to me) and just happened to have naan and white beans which I added lots of parsley to. Sort of a pseudo-Med dish but it sure was delicious!

    • The BEST burger I have made, hands down. I swore off of making burgers at home because they are always overcooked, dry, and tasteless. I decided to try one last time and used this recipe to make “burger dogs” (cylinder burgers served on hotdog buns). The whole family was WOWED. They are perfectly moist, even when cooked well done and actually have flavor! Everyone had another and left off the toppings because they were so good by themselves.
      I was afraid they would be too meatloaf-y but they are definitely burgers. You just have to watch out to not overmix. The consistency worked perfectly for shaping as well.

      Sorry you were disappointed with this recipe. However, 1/4 cup saltine crumbs per pound of beef is not nearly enough to give the burgers a “bready” consistency or flavor. Any chance you mismeasured or used plain bread crumbs? We do offer suggestions in the recipe to reduce the bread crumbs if using anything other than the suggested ingredients, because traditional breadcrumbs are much denser that crushed crackers or panko bread crumbs.

      We are friends with many chefs and restaurant owners. Most of them use the age-old trick of adding a little crumb to the beef mixture to hold in the juices… They just don’t make this common knowledge. You’ve probably eaten dozens of burgers made with crumbs over the years and didn’t even know it. ;)

    • Eye roll! This guy is one of those people that thinks he knows better than anyone else. Attacking peoples’ palates is ridiculous and should signify to void whatever he says.

      I’ve been making burgers almost exactly like this for years in my high dive pubs. Our burgers are legendary. We put a handful of cracker crumbs in each pound of aged ground beef chuck, along with scratch-made steak sauce, instead of the Worchestershire sauce. About 5-6 years ago we switched to GF cracker crumbs so that when people order burgers off the bun we know they are safe for those with a gluten intolerance.

      Like she says, you will not be able to taste the cracker crumbs. The only thing that might happen is a slight change in texture, but that has more to do with over working the meat than the crumbs. I train my line cooks to fold the meat mixture six times, then divide and press into patties. In my opinion, you should still be able to see a little bit of grind once the patties are pressed. The crumbs are just there to absorb the fat and flavor. They have no effect otherwise if you mix and press correctly.

    • I didn’t make this recipe but I’ve made burgers in the air fryer. 350 10-12 mins for a ¼ pounder. 160 degrees internal temp. Less time if you want less internal temp. Flip only once half way through.

  184. This is the way my mom always made hamburgers. She didn’t add the seasoning however. So there is some comfort food feeling about this. But my mom also made meatloaf the very same way. So technically it’s a meatloaf burger. Keep in mind, if you overwork the meat too much, your meat essentially becomes sausage. I now like to keep it simple, roll the meat into a ball, not overworking the meat much. Place on a hot pan and smash it down and then salt and pepper it. Can add other seasonings. The fat content is very important. 80/20. Keep it simple. Don’t over season. Don’t overdo the meat. Your sauces and toppings will ultimately make the ultimate burger.

  195. Best ever ! Can I put( mixed well raw/uncooked )patty in the freezer? Or do I need to cook slightly before freeze?

    • Don’t have to cook them before freezing. I form raw hamburger patties 1/3 pound and then place them on a cookie sheet lined with wax paper so they don’t stick to the cookie sheet. Let them freeze solid overnight then put them in a freezer bag or vacuum seal in packs that you will use for a meal. Pre-freezing them first helps keep their shape and so they don’t stick together if you store them in bulk.

But I added everything else as if I had 2lbs. . Thinking that would compensate for the lack of fat. What we had were 4 amazing burgers!   222. Trying it now, milk and bread crumbs? Are these mini meatloafs , jk…Definitely NOT putting salt in the patty. It will dry out the burger. Always on top. Maybe if there were no salt in the patty there would be no reason to add milk. We will see. 

    BTW … did I mention NEVER put salt in the patty. 

    • If you’re getting dry patties, it’s from something other than salt. Salting your meat before cooking is a practice as old as burgers themselves.

    • I made crispy potato wedges in the oven, super easy and delicious! Just cut some russet potatoes into eight wedges each after washing them thoroughly. Soak with hot water for ten minutes and then pat dry after draining. Toss with oil and spices of your choice. I choose salt, pepper, garlic powder, onion powder, rosemary, thyme, and parmesan. Bake at 400 for 30 minutes on each side. Lots of recipes out there for this though.

  250. I made this last night with one pound of ground angus, so I halved the recipe (it’s just me and my husband). I have to agree, this made for a really tasty hamburger. I opted to make the thin patties, then crafted double cheeseburgers. They were sooo good and so hearty that we could only eat half of our burgers. But that means we have yummy leftovers! These are ingredients that I always have on hand so this will be my go-to burger recipe also. The only changes I made were using Jalapeno Salt in place of regular table salt and unsweetened almond milk instead of regular milk. Fantastic! Thanks!

  254. I made these with lean ground beef the first time, and they were excellent even though I didn’t have any onion powder – I just minced a bit of onion and threw that in instead. I used crushed saltines (I bought the unsalted ones by mistake, yuck, so this is a great way to use them up!) and I used my grill pan to cook them, love the marks. Tonight I made them with ground turkey thigh instead of beef with no other changes (still no onion powder) and again, delicious! Absolutely my go-to patty recipe now.

  261. Great recipe. Best ever. My wife normally does all the cooking. I always wondered why. Now we know. I can’t cook. At all. For some reason, my eyes are just drawn to the letter “H”. There are a lot of great words that start with the letter “H”. Hero. Honor. Heaven. Happy. So, why wouldn’t you want to turn your stove top knob to the greatest letter: The letter H. I’ve always heard that cast iron pans cook really well. Being 100% male, naturally I was drawn to the beefiness of the pan. Strong, large, heavy. Just like me. The perfect pan to go with the perfect letter H. I took a little over a pound of hamburger meat and formed four perfect patties. I know they were perfect because I weighed the hamburger meat to get a total weight in grams. Using my calculator, I divided the total by 4. I’ve always lived by the motto “measure twice, cut once” and “using the right tool gets the job done right”. So, why not apply that careful thinking to your cooking? I CAREFULLY weighed the meat and got each one to the exact gram. Once I saw the eye of the stove glowing that beautiful shade of Fire Engine red beneath that big ole’ heavy cast iron pan, I gently placed the hamburger patties into the pan. What a wonderful sizzling noise it made. I expected to see a lot of juice, but didn’t. I didn’t worry about it too much. I figured it was all nestled inside, just swirling with flavor. As the smoke rose, I thought I was doing really well. Slowly at first but then rapidly gaining speed, the smoke began to fill the house. “What a wonderful thing it is for the smell of beef cooking on the stove”, I thought to myself. It sort of reminded me of the way that Mama’s cookies baking in the oven filled the house. I thought of the joy that wife would feel as she smelled the wonderful aroma of manly beef cooking in the kitchen. But instead she screamed something about “smoke filling the house” and “was something on fire”. I could hear her plainly, but it was hard to see her through the dense fog that sudden enveloped each of the rooms. Instead of sounds of words of adulation, I heard shouts of “where’s the fan” and “for goodness sakes, open the doors”. My dreams of having my own cooking show on television were soon fading away almost as quickly as the thick smoke filled our house. I began to have the distinct feeling that my cooking days were over. Never again would I be able to use the huge, heavy cast iron pan. Nor would I get to turn the stove knobs to my favorite letter. So, for someone who suddenly realized something about themselves, that they can’t cook, this was a perfect recipe.

    They were perfect (I did use an instant cook thermometer) and I know it helped me from overcooking the burgers.

    Do yourself a favor and make these – I was heavy on the ingredients added to the ground beef.

I made this recipe as is, but took advice to add diced red onion and a sprinkle of crushed pepper inside.  I used Panco instead of crackers.  The patty got really nice and crispy, and the patty was very moist and stayed together nicely.  So delicious!  I’m saving to make again and sent to my twin sister who I cook with all of the time!  Loved it!  Perfect!

  276. This is an excellent recipe! Spot-on tasty and juicy. I used Italian style bread crumbs and went slightly less on the salt and garlic. (3/4- 1 tsp)
    Next time I will try some minced jalepeno pepper on some of them.

        When you bake hamburger patties, you must use high heat so an exterior crust forms. Set the oven to 450 degrees F and place a baking sheet in the oven so it gets hot like a griddle. Once hot, transfer the patties to the hot pan. If making thin patties, bake/roast for 2-3 minutes per side. If making thick patties, bake/roast for 5-6 minutes per side.

  280. These are the best homemade hamburgers I’ve ever tasted. I didn’t have Worcestershire sauce, we lost our entire fridge contents to Hurricane Sally, and used Dale’s marinade instead, which I had unopened in the pantry. They tasted incredible.

  281. First time ever grilling Hamburgers and they were amazing! I heated our pellet grill to 400 degrees and smoked the burgers 10 min. on each side (using hickory pellets). Then I heated up the pellet grill to 450 degrees (added BBQ sauce and cheese) then cooked the burgers for 5 min. each side. The burgers came out perfect!

  285. This was a great hamburger patty recipe!  I’d been looking for one to bookmark and this is it. We will definitely use this recipe again.  It was easy and tasty. In fact, they were so delicious, my husband had seconds, despite his resolution to only have one.  We grilled the patties this time instead of frying them, and we always “toast” our hamburger buns  (a bit of butter spread on the cut side of each bun, then they’re placed face down on a cookie sheet until they’re crispy and a bit toasty brown).   SOOO delicious!

  288. These burgers were better than my usual combination, but there was too strong of a breadcrumb taste. It distracted from the meat flavor. Almost tasted more like meatloaf than a burger. Next time I make these, I am going to cut the breadcrumb amount in half. I plan on only adding 1/4 cup. All other tips were spot on, and super helpful. 

    • She literally wrote “If you substitute regular dried breadcrumbs for the crackers or panko, reduce to 1/4 cup. They are denser and will create a “meatloaf texture” if you add the regular amount.” at the end of the recipe. Next time read more carefully! ;)
