Long before I found your blog and all your great recipes I tried to make some myself. So I tried and failed the taste test for about an hour, didn’t like the other recipes I found…there was just something missing. Then it dawned on me……fish sauce….bingo it worked! I cook a lot of Thai and Asian food because my husband and love it so. Had some in the fridge. Now I know why the difference….you used anchovies which are very similar to fish sauce…..so yes anchovies are a must to get that flavor right.
