This recipe is great! The cookies are lemony buttery. We didn’t make little sandwiches but instead drizzled a lemon glaze and pink hibiscus sugar over them. Sooo pretty! 
While they softened a little bit in the container once we left them on the serving platter they hardened back up. 
This will be my go-to lemon spritz cookie. Thank you for the recipe

My icing was fine. But all of my cookies flattened out :( I don’t know why! Did you use real lemon curd? Perhaps there was too much of it or not enough powdered sugar :)

Hi Christine! Without a cookie press, I would roll them into little balls, then press them down to 1/3 inch with the bottom of a drinking glass. That would help keep the shape consistent. Happy Baking!

I’ve been looking all morning for my cookie press and can’t find it. I must have gotten rid of it! I’m really bummed but still wanting to make those cookies. Do you think they can be rolled out? Maybe add some flour? Help – any suggestions.!
