Sultry summer evenings.

Hair pulled up, iced tea in hand, rocking on the deck, fireflies gently flickering, crickets droning in the distance. This is what a summer evening is to me.

Some nights, we let the kids play outside after dark. We laugh as we watch them make their summertime memories. We deliberately breath in our family time, knowing our babies will only be young and innocent a little while longer. We sit and talk about how it seems like only yesterday…

Later we tuck two exhausted little nippers under the covers and sit outside on the deck. Thinking only of the sounds we hear and the warm breeze kissing our skin.

We don’t think about feeding the grownups until late in the evening, when we are ready to open a bottle of wine.

This, my friends, is the perfect moment to pull out smoked trout.

When you crave something succulent and slightly lavish, but don’t want to think about cooking a meal.

Smoked Trout is a treat, straight out of the package, with tender fleshy layers and an intense salty-sweet flavor. It makes plain dishes come to life, and does wonders for a cheese board.

One of my favorite ways to eat smoked trout is on a bright seasonal salad. This Smoked Trout Salad with Avocado Dressing is loaded with fresh goodies from a roadside farm stand.

The peaches and radishes are a lovely pairing with the rich smoked trout because of their light clean flavors.

To accompany this salad, I made an ultra creamy (and healthy) Avocado Dressing. It takes no time to place the ingredients in the food processor, and puree a silky-smooth avocado dressing with a light airy quality.

As we sit under the stars with Prosecco in one hand and a mouthwatering Smoked Trout Salad with Avocado Dressing in the other, I can’t help  but hum to myself, “Summertime and the living is easy…”

Smoked Trout Salad with Avocado Dressing

One of my favorite go-to ingredients is Smoked Trout. With a delicate texture and deep smoky flavor, it's fabulous for quick meals, like this Smoked Trout Salad with Avocado Dressing.
Servings: 6

Ingredients

For the Smoked Trout Salad:

  • 1 bunch radishes stems removed and sliced thin
  • 2 large ripe peaches pitted and sliced thin
  • 5 ounces spring salad greens
  • 12 ounces smoked trout broken into chunks

For the Avocado Dressing:

  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt
  • 1/2 lemon juiced
  • 1/2 cup water
  • 3/4 teaspoon salt
  • 2 tablespoons chive

Instructions

  • Place all the ingredients for the avocado dressing in the food processor (or blender). Puree until smooth.
  • Using a large spoon, pool the dressing on 4-6 salad plates, or streak across the plates like at a restaurant.
  • Arrange the greens on the plates, followed by radishes, peach slices and smoked trout chunks.
