Today’s Sweet Potato Crusted Salmon Sheet Pan Dinner is a wonderful healthy mealĀ option that feeds up to six people. It takes very little time to make, and even less time to clean up. It’s low in carbs, and heavy on protein and veggies.

This Sweet Potato Crusted Salmon Sheet Pan Dinner is made entirely with ingredientsĀ fromĀ ALDI.

I used Fresh Never Frozen salmon fillets from ALDI as the base of the recipe. It’s a light and flavorful fish, with the freshest possible taste.
I crusted the salmon by brushing Dijon mustard over the top and pressing crushed sweet potato chips into the mustard. The Dijon seasons the salmon and acts as the “glue” that holds the crispy sweet potato chip crust to the fish.

The combination of the spicy Dijon and crispy sweet potato chips is a great complement to the richness of the Atlantic Salmon.
Toss fresh snap peas and broccoli in a savory-sweet glaze made of Dijon mustard, soy sauce, and honey. Arrange the veggies on a baking sheet around the salmon.
Then let the sweet potato crusted salmon and the vegetables roast together in the oven.

Sweet Potato Crusted Salmon Sheet Pan Dinner
Ingredients
- 2 1/2 - 3 pounds Fresh Never Frozen Atlantic Salmon
- 1 pound broccoli, cut into florets
- 1 cup crushed SimplyNature Sweet Potato Chips
- 6 ounces snap peas
- 4 tablespoons Dijon mustard, divided
- 2 tablespoons honey
- 2 tablespoons soy sauce
Instructions
- Preheat the oven to 400 degrees F. Line a 18 X 13 inch rimmed baking sheet with parchment paper. PourĀ half the bag of sweet potatoes chips into a bowl and crush to crumbs.
- Place 2 tablespoons Dijon mustard, honey, and soy sauce in a small bowl. Whisk well. Then toss the sauce with the snap peas and broccoli.
- Cut the salmon into 6 pieces. Brush the tops of the salmon pieces with the remaining Dijon mustard. Sprinkle the tops with salt and pepper. Then press the tops into the crushed sweet potato chips.
- Place the salmon fillets, crust-side-up, on the baking sheet. Arrange the snap peas and broccoli around the salmon and bake for 12-14 minutes, until the salmon is just cooked through. Serve warm!
