As a former New Mexican now living …elsewhere.., I agree that the combination of anaheims, jalapenos and poblano chiles are the best substitute for New Mexican green chiles. As an experiment, I tried your recipe exactly as written without blackening and peeling the chiles. I was disappointed to discover that the taste just wasn’t as good. To roast or “blacken” your chiles, roast them directly on top of a gas burner, turning them until they are completely blackened. Set aside to cool. The burnt skins will slide off in the sink. If you have an electric oven, oil the outside of your chiles, put them on a tray under the broiler and turn until blackened all over. Resist the temptation to rinse the chiles under running water to get rid of the skins. You wash away a lot of flavor if you do that.

This was very good, I used anaheims instead of hatch. what if the chiles were roasted? in my area they roast hatch chiles and sell them. I might try this. Cutting up a pork but/shoulder roast with bone is very difficult. This is a very good recipe.

Thought Id try this because it had a high star rating. Should have read them beforw I dished out the $30 to make it. Most of the high ratings are from people who didnt even make it but thought it looked “yummy” DONT RATE SOMETHING YOU HAVENT MADE!!! ITS MISLEADING TO PEOPLE WHO ARE ACTUALLY GOING TO MAKE IT! I will come back and adjust my rating once I have made this recipe.

I have been using this recipe as a scaffold (I always customize recipes) for a couple years now, and it’s always a hit! It’s time to finally leave a review.

How I customize: I use chicken base instead of salt, cook for a bit longer, roast and peel the chilies.

This recipe is fantastic! So good we had it twice in one week! Only things I did differently was roast all the peppers and toasted the cumin and coriander. So appreciate you sharing. A new family favorite 🥰
