While nibbling any cookie, I always think to myself, “You know what would make this even better? …More butter and a touch of salt!”

In my mind, chocolate chip cookies would be better as crispy shortbread. Oatmeal cookies would taste better if they had more butter and less (meaning no) eggs.

Macaroons? Yep, they are in desperate need of butter.

You can’t blame me for going a little overboard on the butter cookies this time of year. After all, I was programmed to desire them once the weather turns cold.

Come December 1st, I start checking the mailbox for those metal tins of shortbread rings with course sugar crystals on top. Surely someone will send me one.

Easy Cranberry Chocolate Chip Shortbread Cookies Recipe #ASpicyPerspective #christmas #holidays

Today I’m sharing an old favorite shortbread recipe, Cranberry Chocolate Chip Shortbread.

It’s prepared in the traditional pan method. I’ve ramped up the flavor a bit by adding orange zest, mini chocolate chips, and cranberries.

Several years ago we had a shortbread-athon recipe testing day before the holidays, creating several new combinations, and our Cranberry Chocolate Chip Shortbread was the standout.

  1. Followed directions to the tee and they did not turn our crispy like shortbread should.  Very tasty though.

  2. I must have missed something. The “dough” was very crumbly and only made one pan of shortbread. It is delicious but didn’t make the amount I needed. Suggestions? thank you

    • Hi Brenda,

Shortbread dough is usually more crumbly than other types of cookie dough. That’s what gives it the crumbly flaky texture. About the one pan, is it possible you accidentally clicked on the serving slider in the recipe form? That would have changed the proportions of the recipe.

  3. I need to try the slice and bake cookie trend soon. It looks so fun!

You come up with something totally mouthwatering! Your imagination knows no bounds. I wish I could make everything on your blog!

I love that the recipe for these cookies is so simple.

  4. Do you grease the pans?

  11. Hey April~ I did mean fresh orange zest. Come to think of it, I don't believe I've seen the dried kind around here either! 1 tsp. = about a medium orange.

  12. oh and a question, can you use fresh orange zest? as they don't sell the dried kind here. If so how much?

  13. I tend to steer away from traditional British baking, seeing as I'm actually IN Britain, and rather wow my friends and neighbours with the almighty chocolate chip cookie……however, I think I am going to make this for Christmas, and may even take some over to our neighbours house.

  14. I just adore shortbread, and this is so perfect for this time of year…looks delicious!

  15. in scotland, you get a year of good luck if you wake up on New Year's to find shortbread on your front step.

  50. I love shortbread! Perfect coffee dunkers!

  51. I love the butteriness of shortbread too! With a touch of salt – heaven. Oh, you have the kitchenaid mixer that has the head that swivels back. I wish for that one – mine doesn't do that so it's hard maneuvering around it sometimes. Anyways, back to the shortbread – it look amazing. I could always go for a piece of that.

  52. This shortbread looks great. I have officially fallen into cookie baking mode, I baked some yesteday (spritz cookies, also full of butter… I will be posting soon) and am already anxious to bake some more. Maybe I should try to bake some shortbread since you speak so highly of it!
