Creamy Salsa Verde Chicken Skillet

Creamy Salsa Verde Chicken Skillet - A healthy one-pot chicken recipe bathed in a spicy cream sauce that is light on the waistline!
Servings: 4

Ingredients

  • 1 1/2-2 pounds boneless skinless chicken breast cutlets (chicken breast cut into thin pieces)
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 16 ounces salsa verde (1 jar)
  • 1 cup chicken broth
  • 4 ounces low-fat cream cheese
  • 1/2 cup chopped cilantro
  • Salt and pepper

Instructions

  • Place a large skillet over medium heat. Add the butter and once melted, add the chicken breast cutlets. Salt and pepper liberally. Sear the chicken for 3-4 minutes per side, then remove the chicken from the skillet and set aside.
  • In the same skillet, sauté the garlic for 1-2 minutes. Pour in the salsa verde, chicken broth, and add the cream cheese. Whisk the mixture until the cream cheese melts, and the sauce comes together smoothly.
  • Once the sauce is smooth and creamy, add the chicken breasts back to the skillet, along with the cilantro. Warm and flip for 3-5 minutes. Serve the chicken covered in the creamy salsa verde pan sauce.

Notes

This recipe is a wonderful leftover, but not a great freezer meal.

  1. I really enjoyed this and my husband went back for more so it definitely got his approval! I did replace the cilantro with 1 TBP of freeze-dried parsley since we don’t care for cilantro.

  9. Great recipe! I’ve made this several times now, with some variations and they have all come out well. I’ve used both chicken breasts and boneless thighs (drain some of the fat off before starting the sauce) and I ‘ve used the Greek yogurt cream cheese, regular and low fat cream cheese. Worked well every time. This is the first recipe I’ve tried from this blog and the success of this one makes me want to try out some more. Thank you for posting.

  13. Was great. Super flavorful. Served it tonight at dinner over brown rice. I thought it was a tad spicy but used a diff brand of salsa verde than usual.  My chicken took a bit longer to cook through 5 minutes each side. But was really impressed how fast dinner was done! Any ideas how to thicken the sauce? More cheese less chicken broth?

Mondays are pretty stressful with me, my husband, and oldest son all having piano lessons in the evening – this might solve my take out rut that I have landed it.   15. Delicious! I am eating this right now. Mine doesn’t look as creamy as the photos but holy yummy I could eat that sauce with a spoon!!! My salsa was a little spicy but that’s fine because my husband and I love spicy! I will get mild next time and serve this the next time I have company over. It is SO good!
