This salad is absolutely gorgeous! You had me at beets (lol!). My spiralizer hasn’t gotten nearly enough use lately, so I’ll have to press play on this salad – it’s so fresh and vibrant for summer!

This is a delicious and super healthy salad. I made slight changes and added dry roasted sesame seeds instead of pumpkin and some fresh coriander. I also couldn’t access your salad dressing recipe from the link, but made a dressing of oil, lemon, soya, garlic  with  a sprinkle of sugar and of course chilli flakes!
