Limoncello Pops
Bold zingy popsicles made with Italian Limoncello and mint! These cool sweet limoncello pops are a welcomed adult treat that make a fun ending for your summer parties.
Estate d’Italia (Summer of Italy) continues… as we are traveling through Italy this month, we will be sharing all sorts of Italian-inspired summertime dishes, including these sweet tangy Limoncello Pops.
We make tons of popsicles throughout the summer months. Most of these are geared towards the kids, but today’s pops are meant for us big people.
After all, we grownups deserve a little frozen refresher just as much as the kids!
With a generous pour of vibrant Limoncello liqueur, an intense southern Italian aperitif (or digestivo), these lemon pops turn from pretty good to favoloso!
I like to sip chilled Limoncello on warm summernights with a bit of fresh mint for contrast. Here I’m offering the same flavors in frozen form for a touch of whimsy.
Just imagine serving your guests refreshing Limoncello Pops after dinner on a sultry summer evening.
This is a treat they’ll be talking about for weeks to come.
Simply dissolve sugar in water, then combine the “simple syrup” with freshly squeezed lemon juice, lemon zest, and Limoncello.
Add a mint leaf to each pop (and a popsicle stick) and freeze until solid.
Then when the moment strikes, pull out your Limoncello Pops and surprise everyone with the magic of this Italian summertime treat!
You can also turn Limoncello Pops into a kiddie treat by nixing the Limoncello for simple Lemonade Pops with mint.
They won’t know what they’re missing… but I suggest you make a grownup batch and a kiddie batch, so you know what they’re missing!

Instructions
- Heat the water and sugar on the stovetop (or in the microwave) until the sugar dissolves. Then pour it into a pitcher along with the lemon juice, Limoncello, lemon zest, and salt. Stir well.
- Pour the Limoncello mixture into 10-12 popsicle molds. Then slide one large mint leaf down into each popsicle mold. Place the lid on the mold trays, and slide popsicle sticks down into the lid slots.
- Freeze for 4+ hours until solid. Then flip the molds over and run under warm water to release the popsicles.
