What is Adobo Seasoning?
Although Adobo Seasoning is a very common ingredient included in many Spanish and Caribbean-inspired recipes, you might be wondering exactly what is this flavorful spice blend.
Wonderfully versatile Adobo Seasoning is a type of all-purpose seasoning salt – and it is, therefore, well, quite salty. It tastes like the perfect combination of savory, smoky, and earthy flavors with a slight hint of spiciness. The salt-heavy blend was originally used as a type of preservative before refrigeration was widely available. Today it has remained a staple in Latin American dishes, and has become popular throughout the US and much of the world.
Sure, store-bought Adobo Seasoning offers a ton of flavor in one simple ingredient. However, it can be hard to find in some stores and regions. Instead, you can quickly make your own packaged Adobo Seasoning substitute at home from scratch with many spices you likely already have! Plus, this Adobo Seasoning recipe can easily be tweaked with several additional spices to create a delicious and unique blend with your favorite flavors.

Is Adobo seasoning the same as Adobo the dish?
Nooooooo. The two are as different as salt is to tomato sauce. Since the Philippines and Puerto Rico were both Spanish colonies, they have a few shared words. Adobar is one of those words, but it refers to two different things. Both countriesโ word have the same meaning: โmarinade or seasonโ or โto marinade or seasonโ. In Puerto Rico, adobar el pollo means โseason the chickenโ, so itโs the actual process, which morphed into naming the seasoning Adobo.
So, these two are not interchangeable, nor are they, even remotely, the same things.
Do you think this would work substituting no-salt? We are SERIOUSLY reducing salt in our foods.
Thanks!
Hi Cathy!
Yes, you can definitely reduce or omit the salt if needed. I find sumac is a good salt substitute that can be added to this recipe as well.
I’ve never tried adobo seasoning at home before, only the occasional meal at restaurants. I’m so glad I found this recipe. It was incredibly flavorful and so simple to put together too!
