Two words, fudge and oatmeal cookies. Now whose been trying to eat healthy this month?
Alright, who’s been trying to eat healthy and failing miserably due to all the luscious holiday treats laying around the house and office??
I keep endeavoring to stick to the one-bite rule, then share the sugary wealth with friends and neighbors. However, I keep finding cookies on my doorstep, in my oven, and in my hand, and I simply can’t refuse their allure.

Oatmeal Cookie Bars
Today’s Fudge Filled Oatmeal Cookie Bars combine the classic flavors of oatmeal cookies and rich chocolatey fudge into one amazing treat!
The top and bottom layers are a tender chewy oatmeal cookie base with a whole lot of rustic oat flavor and a touch of cinnamon.
The decedent chocolate center is a simple combination of sweetened condensed milk, chocolate, and butter that can be baked right into the bars, yet keeps its silky texture.
Oatmeal Cookie Bars Ingredient List
For the Oatmeal Cookie Layers you’ll need all the classic cookie making supplies such as:
- Brown Sugar
- Butter
- Flour
- Eggs
- Vanilla Extract
- Baking Powder
- Salt

For the Fudge Layer you’ll need only THREE ingredients!

Can I Use Nutella As The Fudge Center Instead?
Yes! You can definitely add Nutella.
The texture will be a little different… Not as silky and soft in the middle, but they will taste great!
How Long Does This Recipe Take To Make?
This recipe is a whole 45 minutes long, give or take a couple minutes. But don’t worry, it’s divided into a 15 minute prep and 30 minute bake time.
So, only a third of your time is prepping, and two thirds is waiting for the oatmeal cookies to finish baking.
Read a book, watch a show, fold some laundry, just don’t forget to set a timer!

Fudge Filled Oatmeal Cookie Bars
Ingredients
For the Oatmeal Layer:
- 3 cups brown sugar packed
- 1 1/2 cups unsalted butter softened
- 3 large eggs
- 2 teaspoons vanilla extract
- 4 cups old fashioned oats
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons salt
- 3/4 teaspoon ground cinnamon
For the Fudge Layer:
- 14 ounces sweetened condensed milk
- 12 ounces semisweet chocolate chips
- 3 tablespoons butter, softened
Instructions
- Preheat the oven to 350 degrees F. Line a 9x13-inch baking dish with parchment paper. Place the oats in a food processor and pulse to partially grind.
- Place the brown sugar, butter, and vanilla extract in an electric stand mixer. Beat on high to cream the butter and sugar until light and fluffy, about 3-5 minutes.
- Turn the mixer on low and add the eggs, baking powder, salt, and cinnamon. Then slowly add the flour and ground oats. Scrape the bowl, then beat again until smooth.
- Scoop 60% of the dough into the baking dish. Spread the mixer evenly over the pan.
- For the fudge layer, place the sweetened condensed milk, chocolate chips, and butter in a microwave safe bowl. Microwave for 2-3 minutes, until the mixture is warm enough to melt the chocolate. Stir until smooth and pour the fudge over the bottom oatmeal layer.
- With the remaining oatmeal dough, drop small pieces over the entire surface for the fudge. Bake for 30-35 minutes, until golden on top. Cool completely before cutting. (Chill for 60 minutes for the cut pieces.)
