Grilled Grouper with Orange and Olives
A grilled masterpiece for healthy eating in the sweltering summer heat. Savor the season with easy Grilled Grouper, Grilled Oranges, Red Onions and Olives, served with a cool glass of white wine!
Big juicy fillets of grilled fish are one of my absolute favorite things to serve in the summer.
A tender piece of grilled grouper, slightly charred on the outside, yet moist and flaky on the inside, a fresh cool salad, and a nice glass of wine are all it takes to make any summer evening feel like an occasion.
This simple mediterranean dish is both rustic and elegant, with its sweet citrus notes, briny olives, and punch of onion.
It’s a dish I can whip out in minutes and still feel like I’m serving something special.
All summer meals should be so accommodating.
The thing to remember about any grilled fish recipe is that undercooked fish tastes way better than over cooked fish.
Grilled fish is best when it’s just barely cooked through. Over cooking your fish results in a dry, less than desirable, meal. A complete waste of good fish in my opinion.
Try grilling the grouper for just 3-4 minutes per side. Check to make sure the edges of the grilled grouper are flaky, but the thickest part still seems soft.
Then allow it to rest under foil for at least 3-5 minutes so the fish can slowly finish cooking, off the heat.
Once the oranges and onions are charred a little bit, serve them with the grouper and a liberal sprinkling of olives.
This is a feast fit for your most lavish summer party… Yet easy enough to pull off in the next 15 minutes.
Not a bad combination! Why not try it tonight with shaved fennel salad and a cool glass of sparkling white sangria.
Grilled Grouper with Oranges and Olives
Ingredients
- 2 pounds whole grouper fillet
- 1 large red onions sliced
- 4 oranges zested and sliced
- 2 tablespoons olive oil
- 1 clove garlic minced
- 3/4 cup small briny olives
- Salt and pepper
Instructions
- Preheat the grill to high heat. Pat the grouper fillet dry then drizzle with olives oil. Sprinkle with minced garlic, salt and pepper. Then zest 1-2 oranges over the top of the grouper. Gently rub the grouper on both sides to distribute the orange zest, garlic and seasoning.
- Slice the oranges and onions. Grill the grouper for about 4 minutes per side, carefully flipping with two spatulas, so the fillet doesn't break. Tent with foil, then grill the oranges and onions for 1 minute per side.
- Place the grouper on a platter with the grilled onions, oranges and olives. Serve warm.
