Every spring and summer my family takes road trips from the Blue Ridge down to the North and South Carolina shoreline. Every trip the kids talk about their goals of catching a live crab, learning to surf, or finding the most beautiful shell.

And every trip, I secretly make my own guileful goal: To eat as much Key Lime Pie as humanly possible while at the beach.

While Lt. Dan and the kids are discussing soft shell crab sandwiches, fresh oysters, and famous beach donut shops, I’m secretly counting all the places I can get good southern Key Lime Pie and wondering just how many pieces I can order without looking like a gluttonous slob.

Maybe 3 pieces at each restaurant? Is that over-doing it?? Is there really such a thing as over-doing it when it comes to Key Lime Pie???

I can see Dan’s disapproving nod in my mind… Shaking it off.

With such an attraction to key lime pie, you’d think I make it all the time.

Yet a lot of effort goes into making a killer key lime pie. And then of course you have to use the oven, which is something none of us want to do in the warm months.

So when I’m not at the beach, I get my summertime key lime fix by making cool creamy Key Lime Pudding Pops with graham crackers crumbles.

These little beauties combine the sweetness and powerful tang of a good key lime pie, in smooth frozen pudding pops… that require only 5 ingredients to make.

That’s hard to beat!

To make these easy 5-Ingredient Key Lime Pudding Pops simply combine instant vanilla pudding mix with sweetened condensed milk, fresh key lime juice mixed with water, and a little fresh lime zest. Beat with an egg beater until smooth and scoop into popsicle molds.

Then sprinkle graham cracker crumbs over the top of the pudding pops and freeze until firm.

Then run the bottom of the popsicle molds under warm tap water and pull them out. Thhhhhhump.

5 Ingredient Key Lime Pudding Pops - Creamy and easy-to-make Pudding Pops with tart Key Lime Pie flavor, complete with graham cracker crust!
Servings: 10 pops

Ingredients

Instructions

  • Beat the instant pudding mix, sweetened condensed milk, lime juice, 3/4 cup water, and lime zest together in a medium bowl. Once smooth, scoop the mixture into 10 popsicle molds, 8 if your molds are large.
  • Place a wooden popsicle stick in each pop. Then sprinkle the crumbled graham cracker on top. Freeze for 3-4 hours.
  • To serve: Flip the popsicle molds over the run under warm tap water for about 30 seconds. Then firmly pull the Key Lime Pudding Pops out of the molds. Serve immediately.

  7. How much water?  It is notmentioned as an ingredient?

  8. These look so easy and refreshing, I love the graham cracker crumbs on the bottom. I love graham cracker crusts the most so these will have to be made. They feel like an adult version of a popsicle and so much classier. 

  9. I love key lime pies. These pops are a terrific build on the original!
    My request to you is if you have a “long” version with no instant pudding. I try to avoid packaged food as much as possible (in this case, making a sweet exception for the condensed milk.)

  17. There is a place a little south of Myrtle Beach called Brookgreen Gardens that has a little kitchen out in the gardens. It has amazing Key lime pie. The gardens are a little expensive to get in but ticket is good for several days.

  18. gaahhhh!!! Sommer- key lime pie is my very favorite! It is one of the things I am despondent over not being able to eat anymore. Maybe I can jimmy rig a vegan version of these- they looks so good!!
