Coulibiac of Salmon\u2026 AKA Salmon Wellington Recipe<\/h2>\n\n\n\n

Today\u2019s recipe concept came from the beloved Asheville chef Joe Scully of The Corner Kitchen<\/a>.<\/p>\n\n\n\n

He introduced us to Coulibiac of Salmon <\/strong>(kool-ee-bee-ack) at a local wine dinner several years ago, and I immediately fell in love! It\u2019s very similar to a Salmon Wellington recipe, or Salmon en Cro\u00fbte, yet with a few added layers for texture and intrigue!<\/p>\n\n\n\n

One problem, this traditional Russian dish involves a layer of hard-boiled eggs, the only<\/em> food I simply can\u2019t stomach. (It\u2019s the sulfuric yolk odor. I can\u2019t explain it, but it makes me gag!)<\/p>\n\n\n\n

So I\u2019ve substituted wilted spinach for the egg layer, it\u2019s a mild, but colorful adjustment.<\/p>\n\n\n\n

I\u2019ve also modified it for individual portions, making Salmon Coulibiac easier to handle and faster to bake.<\/p>\n\n\n
