Porterhouse Steaks with Compound Butter
Let’s savor summer just a little longer, with Campfire Porterhouse Steaks topped with herby Compound Butter. This classic combo is perfect for backyard parties or your weekend camping trip.
Lt. Dan and I used to adore camping.
We spent many of our early vacations backpacking in Colorado. We loved following quiet trails, bathing in ice cold streams, and preparing our food over a campfire. Through college and our first few years of marriage, most of our extra money was spent purchasing gear such as all-weather sleeping bags, a portable purifier that could turn mud into drinking water, and high-beam head lamps, stuff like that.
We had high hopes of raising our children to enjoy the great outdoors. In fact, part of the reason we moved to the Blue Ridge Mountains was to live in a place where we could regularly enjoy “roughing it” together.
Then… we chickened-out.
We were nervous to take our babies deep into the woods. Then we were nervous to allow unpredictable toddlers around a campfire. Then life got really busy and a little out of control for a while. Before we knew it, we had a 9 and 7 year old who had never been camping.
It was time to stop, re-prioritize our life, and commit to making great family memories while our kids still enjoy our company.
This summer we went on two family camping trips. Not the way we used to do it, bare-bones with something to prove. We took relaxed family camping trips at a campsite.
I’ll admit the first go was a little shaky. It rained all night and there was a puke-in-tent incident. Yet the second trip was much easier and we enjoyed ourselves immensely. We fished, swam, hiked, and cooked everything under the sun, over our portable camping grill.
You think I’m kidding about the camping grill? We made stromboli, huevos rancheros, grilled margarita pizza, french toast, bacon and eggs and all sorts of regular grilled items as well.

You know, meals at the campsite don’t have to be mundane. Really, anything you could cook on a stove top you can put on a grill. With a little forethought, you can serve sensational meals right around your campfire.
Porterhouse Steaks with Compound Butter is a dish I might serve to guests at a weekend dinner party, but who’s to say you can’t serve it at the campsite?
I packed a few enormous porterhouse steaks in the cooler, and whipped up a batch of compound butter before we left on our trip. This lemon herb butter was an elegant and flavorful touch atop the hulky man-steaks. I served them up with grilled veggies and Bush’s Steakhouse Grillin’ Beans for an impressive open air feast.
The compound butter not only made the porterhouse steaks sing, it is a great item to keep in the cooler on a camping trip. You can add compound butter to scrambled eggs, toast, easy campfire pasta dishes, grilled veggies, you name it.
My other favorite go-to item for camping is Bush’s Grillin’ Beans. We enjoyed the bold Steakhouse variety with our Porterhouse Steaks, and the Texas Ranchero beans with our Huevos Rancheros.
Grillin’ Beans are such a great convenience food for camping because they are already seasoned to perfection, needing only to be opened and warmed.
We plan on taking more camping trips this fall and will definitely have Bush’s Grillin’ Beans with us for more camping grill creations!
Porterhouse Steaks with Compound Butter
Ingredients
For the Compound Butter:
- 1/2 cup unsalted butter softened
- 1 clove garlic peeled
- 3 tablespoons fresh thyme leaves
- Zest of 1 lemon
- 1/2 teaspoon salt
- Dash cayenne
For the Porterhouse Steaks:
- 4 Porterhouse steaks 1 to 1 1/4-inch thick
- Hot smoked paprika
- Salt and pepper
Instructions
- Place all the ingredients for the compound butter in a food processor. Puree until smooth and creamy. Scoop the compound butter onto wax paper and roll into a cylinder. Wrap the ends under and refrigerate.
For the Porterhouse Steaks:
- Heat the grill to high heat. Generously sprinkle with salt, pepper, and smoked paprika. Grill for 2-4 minutes per side, to desired interior color. 2 minutes per side for medium-rare.
- Once off the grill, tent the steaks with foil and allow them to rest 10 minutes before serving. Slice the compound butter and top each warm steak with a slice.

Oh yum! I haven’t eaten red meat since I was in high school, but once I hit 2nd trimester, all I wanted was a big juicy steak!

My favorite grilling recipe is chicken in a homemade marinade (white wine, tres-citrus juice (orange, lime, lemon), & olive oil. I would merry that will the bourbon & brown sugar beans. :)

I can’t believe the spread you put together on a camping stove! I’m not worthy!
I LOVE any kind of grilled steak – I’ve been thinking of trying a grilled PH but it makes me nervous because it’s such a good cut and I feel like I’d mess it up! :( Maybe this weekend. Anyway, recipe wise I love grilled barbqued chicken, with a nice sweet sauce!

To me nothing really beats a grilled rib eye that was seasoned only with salt and pepper – grilled to medium. Would serve the Smokehouse Tradition beans with it and a side salad.

This recipe has me pulling out my grill for tonight. Yummy!!
I use a variety of McCormick Grill Mates Marinades and marinade everything I put on the grill. I make a bean pot using Bush’s Original beans, a combination of 2-3 Grilling beans (whatever I have on the shelf) Mix all together adding, BBQ beef, brisket,onions, brown sugar, bacon, garlic, liquid smoke, BBQ sauce, chopped granny smith apples and bake – Tummy
I love compound butter with steaks…always just the perfect compliment! The cookout looks like so much fun, a great way to say goodbye to summer!
Looks like a fun camping trip! And I adore porterhouse steaks. Especially with a flavoured butter on top!
I also love to camp and have camped in every state in the eastern corridor. I would eat baked beans with just about anything, but when I’m camping I particularly like them for breakfast. All you need is a small fire and a skillet. First crisp some bacon in the skillet, then cook eggs in the rendered fat, and finally add the beans and Just heat through. It only takes a minute so your eggs are still warm. I sometimes make this at home on the weekends, and it’s like I can almost smell the smoke from the fire. My favorite is a toss between bourbon/brown sugar and the southern pit bbq.

I would love the Steakhouse Recipe beans with my husband’s T-Bone steaks. He uses a special dry rub and the recipe is important to me because when we first got married and moved into our first home he made steaks with this special rub and he has been doing it ever since. First off, I love the bourbon and brown sugar variety – I serve it with everything I grill. Our family favorite is grilled chicken with our own marinade. We mix olive oil, chopped garlic, soy sauce, brown sugar and a splash of orange juice in a sealable bag, toss in the boneless/skinless chicken breasts and let it marinate while we prep the grill. It’s special for us because the kids have fun making the marInade – no measuring, just “eye-balling” and they are excited to eat something they helped prepare. Cool giveaway!

I know what you mean about the fear of taking little ones camping. Our 4 year old hasn’t been yet and I can’t imagine taking our 9 month old! But we do campfires regularly in our backyard and this fall we’re renting a cabin in the mountains. It’s not the same as sleeping in a sleeping bag but it’s still good memories. Can’t wait till ours are a bit older and we can take them camping for real like you’ve done. Yay! Oh, and the steak looks crazy-good. Thanks for sharing!

What a fun BBQ party! :) My favorite grill recipe is my family’s favorite Sweet and Spicy Chicken Drumsticks. Marinate with chili for heat and orange marmalade for sweetness. It’s totally awesome with Bush’s Sweet Mesquite Beans! Hm….can’t wait to start my Labor Day BBQ party of my own. :)

Southern Pit Barbecue beans would pair well with my favorite thinly slice chicken breast grilled with lots of bbq sauce
I love a nice big fat juicy steak seasoned with just salt/pepper. Those steakhouse grilling beans would be a perfect compliment to that!
mmmm Love compound butter! It sounds simple, but we have a crusted steak recipe with home made A1 and oh goodness, it is so good,. I would clearly pair it with the steak house beans!

I like to grill a pepper steak and I’d pair it with the SOUTHERN PIT BARBECUE beans. It’s special because when my husband and I first were married we would go to the beach and fix the recipe.

I think I would keep it simple. Mustard bbqd chicken paired with mesquite beans
