Roasted Squash with Pear and Blue Cheese Streusel
I’ve got another delectable and easy cold-weather side dish for you today… Roasted Squash with Pear and Blue Cheese Streusel. A gorgeous combination of fall flavors.
Does anyone else get giddy over fall vegetables??
I recently found a boatload of beautiful winter squash at our local farmers market. I like tender summer squash as well, but the bold colors and intense flavors of winter squash make me really excited.
The day I picked up the squash for this recipe, a funny thing happened at the farmers market. Not one, but two different sellers recognized me from my thumbnail image as “A Spicy Perspective.”
“Hey, are you A Spicy Perspective??” was shouted out to me twice within a 10 minute time span.
This never happens. I mean never. Always a happy hermit, I post recipes each week from the introverted state of my quiet kitchen without any romanticized notions of becoming the next Food Network Star.
I was shocked. This might be my one and only z-list celebrity moment and, of course, I had no makeup on and was wearing a bulky sweatshirt and flip flops!
I pulled myself together and had a polite humbling conversation with the two separate individuals, regardless of disheveled appearance. Then I moved on with my gorgeous acorn and carnival squash that looked more like a star than I ever will.
I can live with that.
As long as I can find sweet and vibrant squash to roast throughout the cold months, I can live without fame or fortune. *wink*
However, I do like to “glam up” roasted squash with other fabulous fall flavors.
Here I made Roasted Squash with Pear and Blue Cheese Streusel, a simple recipe that packs a punch!
I simply roasted squash wedges until tender, then filled each cavity with a mixture of diced pear, walnuts, blue cheese and brown sugar.
Then I popped them back in the oven to get warm and toasty!
The sweet pear flavor, sharp bite of blue cheese, and crunchy walnuts take earthy roasted squash to another level of goodness.
I’d say Roasted Squash with Pear and Blue Cheese Streusel has real star-power.
I almost felt like papparazzi taking these pictures!
Roasted Squash with Pear and Blue Cheese Streusel
Ingredients
- 3 squash acorn or carnival, acorn squash are sweeter
- 2 tablespoons olive oil
- 1 ripe pear any variety
- 1/2 cup chopped walnuts
- 2 tablespoons brown sugar
- 1/8 teaspoon ground cumin
- 2/3 cup crumbled blue cheese
- Salt and pepper
Instructions
- Preheat the oven to 400 degrees F. Cut each squash into quarters and scoop out the seeds. Then place the squash pieces on a rimmed baking sheet and drizzle with olive oil. Salt and pepper liberally.
- Roast the squash for 40-45 minutes, until fork tender. Meanwhile, dice the pear and mix it with the walnuts, brown sugar, 3/4 teaspoon sea salt, and cumin. Once the squash is tender scoop the pear mixture into the cavity of each squash wedge and top with blue cheese.
- Bake again for 10-15 minutes to soften and toast the cheese. Serve warm.

this was fwd me by my daughter…so glad she did…I will try to make this this week for a thanksgiving gift to a dinner I am being invited to..hoping it will rewarm well..
