Today I’m sharing this crisp juicy cheese-stuffed air fryer chicken recipe in celebration of my friend Gina’s latest book, the SkinnyTaste One & Done Cookbook. I loved the idea of using this seasoning to both flavor the chicken, and create a crunchy low-carb crust. Gina is brilliant!

This simple Air Fryer Everything Bagel Chicken Roll-Ups recipe is an absolute winner. It’s bold, comforting, light on the hips, yet easy to make. In fact, every recipe I’ve tried from SkinnyTaste One & Done has been a huge hit in our household.

Ingredients You Need

  • Everything bagel seasoning – see note below for a homemade blend
  • Sesame seeds – white or black
  • Large egg whites – use the yolks to make Vietnamese egg coffee or the best homemade vanilla ice cream
  • Whipped cream cheese – regular or low fat cream cheese, softened at room temperature
  • Reduced-fat cheddar cheese – shredded
  • Scallions – chopped
  • Chicken breast cutlets – thin-sliced boneless skinless chicken breasts
  • Baby spinach – chopped
  • Olive oil spray – for spraying the roll-ups before air frying

How to Make Everything Bagel Seasoning –

No Everything? No worries! Make a simple substitution at home using a handful of ingredients. Combine the following in a small bowl or sealable container:

  • 2 tablespoons dried minced onion
  • 2 tablespoons dried minced garlic
  • 2 tablespoons poppy seeds
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 tablespoon coarse salt
Recipe ingredients: Bowl of baby spinach, a shallow dish with everything bagel seasoning, bowl with a combination of cream cheese, sliced green onions, and shredded cheddar cheese.

How to Make Everything Bagel Chicken Roll-Ups

  1. Do your prep work first! Gather all of the ingredients. Stir together the bagel seasoning and sesame seeds in a shallow dish. Place the egg whites in another bowl.
  2. Preheat an air fryer to 375 degrees F.
  3. Make the filling by combining the softened cream cheese, cheddar, and green onions in a small bowl.
  4. Place the chicken cutlets on a cutting board. Spread 1 1/2 tablespoons of the cream cheese mixture on each cutlet, then put 1 tablespoon spinach leaves in the center of each. Roll up the chicken and place the seam side down.

Pro Tip: You can use toothpicks to keep the stuffed pieces of chicken rolled. And yes, go ahead and air fry the roll-ups with the toothpicks inserted. Just be sure to remove them before serving!

    1. Next, dredge each roll-up in the egg whites, then in the seasoning mixture. Shake off any excess seasonings as you go. Coat only a few at a time, just enough to fit in the air fryer basket without them touching.
    2. Working in batches, place a few of the roll-ups in the air fryer basket and spray the tops with oil. Cook for 15 minutes, turning halfway, until golden and crisp on the outside and cooked through in the center.

    Transfer the roll-ups to a plate and serve warm!

    Everything But the Bagel Chicken Recipe Tips

    • Look for really skinny chicken cutlets. They should be about 4 ounces each. If you can’t find them precut, buy a 2 pound 4-pack of chicken breasts and carefully slice each breast into 2 cutlets and flatten to 1/2 inch with a meat mallet.
    • “Everything Bagel” seasoning in popping up in grocery stores all over the country. If you can’t find it, I include Gina’s instructions for how to mix up a batch of EBS yourself in the recipe card below.
    • It’s best to prep and set out all the ingredients before starting. That way, you can make a little assembly line for filling and coating the chicken.
    • Don’t be tempted to add more cheese than listed in the recipe. These proportions not only keep the recipe light, they keep the filling from running out on the sides.
    • Work in batches to cook only 3 to 4 cream cheese chicken roll-ups in the air fryer at once. You do not want the pieces to overlap or touch! They need a bit of space around them to allow the hot air to evenly circulate and get the exterior crispy.
    • I made this dish in both the air fryer and in the oven. Both methods work well! The air fryer does create a crispier golden exterior. However, in the oven you can cook the chicken all at once.

    Is everything bagel seasoning gluten-free?

    Yes, it is! Classic EB seasoning is made only with dried seasonings and seeds, and no gluten whatsoever.

    How do I bake everything bagel seasoning chicken roll-ups in the oven?

    Preheat a conventional oven to 425 degrees. Meanwhile, prep the chicken per the original recipe.

    Place each coated chicken roll on a baking sheet lined with parchment paper. Bake for 25 minutes, until the meat is cooked and juicy.

    How long do leftovers last?

    Let leftovers cool completely before transferring the chicken to an airtight container. Keep in the refrigerator for up to 3-4 days.
