Muffuletta Stuffed Chicken Breast Recipe: Juicy baked chicken breasts stuffed with classic New Orleans Muffuletta fillings, like salami, olives, and cheese!

Honestly, is there anything you can’t do with chicken?
We shred it, fry it, broil it, roast it… Season it with uncountable spices, sauces, and toppings.
Chicken is the all-purpose protein champion of the culinary world.
And yet, sometimes we get tired of it. Right?
When my family has eaten all the chicken they can handle, and I still have a stockpile in the freezer, I like to stuff chicken to give it a topping-heavy makeover.
New Orleans Muffulettas
If you’re not familiar with Muffulettas, they are a New Orleans-style sandwich stacked high with various cold cuts, cheeses, and a bold olive salad.
Today, I thought I’d take all the workings of a great Muffuletta sandwich and stuff them into chicken breasts, to create a low carb protein-packed main dish!
No bread here, just molten cheese, chopped salami, briny olives, and capers.
This is a main dish made-in-heaven for low carbers or those on a ketogenic diet!
Muffuletta Stuffed Chicken Breast Ingredients
- Chicken breasts, of course. Although you can use 4 large chicken breasts instead of 6 small, I like to make the smaller portions and have a couple of breasts leftover for lunch the next day.
- Cheddar cheese. Shredded off the block for freshness and melt-
abilty . - Swiss cheese. Same as above. A blend of swiss and cheddar offer a touch of diversity.
- Salami. Buy slices, then diced them small.
- Kalamata olives. Pitted and chopped.
- Green Olives. The kind stuffed with pimentos.
- Capers. Make sure to drain them.
As you can see, all of the ingredients stuffed inside the chicken are salty, so there is no need to season the chicken with salt.
Easy Stuffed Chicken Breast Recipe
All these rich and briny flavors come together to make the most amazing chicken filling.
Simply cut a pocket deep into each chicken breast. Then stuff the filling inside, and turn the chicken filling-side-up, so it can bake like a bowl to hold all the cheesy goodness.
Baked Stuffed Chicken Breasts
Now all you have to do is pop the stuffed chicken breats in the oven for 25 minutes, until the chicken is cooked and the filling is bubbling.

Muffuletta Stuffed Chicken Breast Recipe
Ingredients
- 6 small chicken breasts
- 1 cup shredded cheddar cheese
- 1 cup shredded swiss cheese
- 1/2 cup diced salami
- 1/3 cup pitted kalamata olives, chopped
- 1/3 cup pimento stuffed green olives, chopped
- 1/3 cup capers, drained
Instructions
- Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper. Lay the chicken breasts flat on the baking sheet. Starting from one side, cut a deep slit (or pocket) into each chicken breast, parallel to the baking sheet, leaving three sides intact. Try to make the cut even so the attached edges are all about 1/2-inch thick.
- Chop the salami and olives. Shred the cheeses.
- Into a mixing bowl, measure both kinds of cheese, diced salami, chopped olives, and capers. Mix well.
- Stuff the mixture evenly into the chicken breasts, turning them upright, so the stuffing is facing up. Sprinkle the tops with ground black pepper.
- Bake for 25 minutes, until the chicken breasts have cooked through and the filling is bubbly. Serve warm.
