This last Saturday was my final baking day before Christmas. I spent eleven hours baking and baking, until I had enough cookies to fill a plate for many of our close friends–and then some! It was very tiring, but I always enjoy the process of creating homemade gifts. It feels like you’re offering your loved ones a little piece of yourself!

My new favorite cookie recipe this season is one I’ve been working on for a while, Chai Latte Cookies. These little chai sandwich cookies are ultra tender with a creamy spice flavor and a dollop of cardamom vanilla frosting inside. Mmmmmmmmm.

Chai Latte Cookies

Prep Time: 25 minutes
Cook Time: 8 minutes
Total Time: 33 minutes
These little chai sandwich cookies are ultra tender with a creamy spice flavor and a dollop of cardamom vanilla frosting inside.
Servings: 40 cookies

Ingredients

Instructions

  • Preheat the oven to 375 degrees F. Baking your baking sheets with parchment paper.
  • Cream the butter, sugar, and instant chai together until fluffy. Add the vanilla and egg, mix well. In a bowl, mix the flour, baking powder and salt. Slowly add it to the sugar mixture until beaten smooth.
  • Add 1/4 cup of sugar to a small bowl. Roll tiny 1/2-inch balls of dough and place them in the sugar. Roll them around to coat and move them to a baking sheet, about an inch apart.
  • Using the bottom of a glass, press the dough balls until they are slightly flattened out, but not thin.
  • Bake for approximately 8 minutes.
  • Once cooled, pipe a small mound of spiced frosting onto half of the cookies (bottom-side-up). Top each cookie with another cookie. Sprinkle with powdered sugar.

  1. Hi! Instant chai mix isn’t available where I am so can I make my own? Do I have to add sugar to the chai mix or is the 1/2 cup sugar in your recipe enough for sweetness? Thanks.

    • Hi Sally,

      Instant chia is typically sweet and has powdered dairy mixed in for a creamy chai texture. I’d love to hear what kind of chai mix you are using, to better help. Probably a little extra sugar would be a good idea. I don’t think you necessarily need to add anything for the dairy though.

  2. Does this really need half a pound of butter or half a cup?  Just don’t want to screw this up.

  4. These cookies were delicious! I did find that leaving the raw cookies out for 20 minutes before baking made them chewier and softer.

  5. Sommer, I had to comment – these are wonderful!! I’ve made them twice now, once as a practice round (and my boyfriend demolished them), then again for a cookie swap at work. They were declared delicious by all…somewhat time intensive, but not difficult, and such a unique flavor. Thank you for the recipe, these are a new favorite!

    • I got mine at Trader Joe’s – it’s just instant chai mix (that you can stir into milk or water to make a chai latte drink). Cheap and delish…

  8. Do the Chai Latte cookies freeze well? I really want to try them and also have a cookie exchange coming up in 2 weeks.

    • Hi Shannon! You know, they never last long enough to stick them in the freezer at my house. I’m sure the cookies would be fine in the freezer, but you may want to make the filling right before the event–just to be safe.

  27. We do the same cookie baking marathon approach…I guess I feel like as long as we are making a mess in the kitchen, we may as well make a really big mess all at once. Besides, that way you have all of your favorite cookies on one plate to sample the week before Christmas.
