Our family struggles with weekday breakfasts… We know it’s important to start our day off with a good breakfast. Yet none of us want to get up early enough to make a proper meal.
We tend to fall into the rut of quick scrambled eggs, protein shakes, and low sugar cereal.
Boring.
Fortunately I’ve discovered overnight oatmeal. An easy way to have a filling ready-made breakfast waiting on you when you wake up!
The simplest version of overnight oats requires only equal portions of old fashioned oats and milk. Just mix them together in a small 8 ounce canning jar, cover, and refrigerate overnight.
By morning the oats have absorbed the milk and created a silky oatmeal texture.
You can eat your overnight oats cold or take off the lid and warm it in the microwave. You can take your jar on-the-go for breakfast in the car or a mid-morning snack.
Best of all, you can doctor up your hearty overnight oats into all sorts of wonderful flavor variations.
Today I’m sharing Pumpkin Spice Latte Overnight Oatmeal; a fun and festive way to enjoy your oatmeal and get a little caffeine kick to boot!
Before you go to bed measure: wholegrain old fashioned oats, milk, pumpkin puree, honey, instant coffee (regular or decaf), vanilla extract, and pumpkin pie spice into little jars.
Stir, cover, and refrigerate.
In the morning you’ll have a creamy dreamy breakfast you’ll look forward to, with the flavor of a favorite seasonal coffee.
PS, if you take out the instant coffee, it’s tastes like pumpkin pie oatmeal!
Pumpkin Spice Latte Overnight Oatmeal has been a breakfast sensation at our house. The kids can make it themselves and love the spiced flavor.

Pumpkin Spice Latte Overnight Oatmeal
Ingredients
- 1/2 cup old fashioned oats
- 1/2 cup milk, any variety
- 3 tablespoons pumpkin puree
- 1+ tablespoon honey
- 1 teaspoon instant coffee granules, regular or decaf
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
Instructions
- Place all ingredients in an 8-ounce jar. Stir well, then screw on the lid.
- Refrigerate over night, or at least 6 hours.
- Enjoy cold, or remove the lid and warm in the microwave.

I tried this! It was not my favorite. But that might be because I did not add the coffee. It smelled good, but it was not as sweet as I hoped it would be. Maybe add more honey next time?
I am definitely giving this a try tonight, its the season for pumpkin spiced lattes hurray!
Yum what a great suggestion for an overnight oats recipe. My husband has been trying to eat oats everyday for breakfast recently but they just look so bland. I am going to give this one a try I am sure he will love it!
