Instant Pot Keto Crustless Quiche – An easy pressure cooker quiche recipe with a light luxurious texture. It’s low carb, high protein, and utterly delicious!
When’s the last time you made a quiche?
Was it soft and pillowy, or crispy around the edges and dry in the center.
Quiche is a simple sort of recipe to prepare. Yet it’s also a dish people tend to over cook. We’re so concerned with the possibility of raw eggs in the center, that we leave it in the oven far too long.
It’s a common mistake.
There are ways to fool-proof quiche making… Placing a water bath in the oven certainly helps.
However I find the best way to make sure your quiche is moist and fluffy in the middle is to pressure cook it.
That’s right, bake it in your Instant Pot!
How to Make Instant Pot Keto Crustless Quiche
Making quiche in an electric pressure cooker could not be easier!
- Simply place the rack in the bottom of the pressure cooker. (All brands of modern digital pressure cookers should come with a small round rack.)
- Add water to the pot and set a buttered soufflé dish on the rack.
- Whisk all the ingredients together. Then pour the mixture into the soufflé dish.
- Pressure cook the quiche on high for 30 minutes.
Inside the pot, the pressure cooker is creating one heck of a steam bath for the quiche. This locks in the moisture, ensuring the perfect ultra silky texture of a good French quiche.
When the quiche comes out of the Instant Pot, it’s ridiculously soft and supple. It’s an airy disk of egg with speckled salty savory goodness dispersed throughout.

Instant Pot Keto Crustless Quiche
Ingredients
- 6 large eggs
- 3/4 cup heavy cream
- 1/2 cup chopped fresh spinach
- 1/4 cup chopped sun dried tomatoes, drained
- 3/4 cup shredded fontina cheese, or gouda
- 1/2 cup crumbled feta cheese
- 1 teaspoon fresh chopped rosemary
- 1/4 teaspoon crushed red pepper
- Salt and pepper
Instructions
- Butter a 7-8 cup soufflé dish. Place the rack inside the Instant Pot. Then add 1 1/2 cups water to the pot and place the soufflé dish down on the rack.
- Crack the eggs into a mixing bowl. Whisk well. Then whisk in the cream, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper.
- Stir in all remaining ingredients. Pour the mixture into the soufflé dish.
- Lock the Instant Pot lid into place. Set on manual Pressure Cook High for 30 minutes. Once the timer goes off, turn the Instant Pot off and perform a Quick Release.
- Allow the quiche to sit in the Instant pot for 5-10 minutes. Make sure the steam valve has dropped, then unlock the lid.
- Carefully lift the soufflé dish out of the Instant Pot. Cut and serve.

This is my favorite quiche recipe! It always comes out perfectly no matter what cheese(s) or add-ins I use. Have you ever tried freezing it?
Easy, fast, delish! Had all the ingredients in the house except Fontina, so subbed Gouda as suggested. Wow, wow and wow! My fussy husband loved it as well , his comment: “It’s a keeper!” He’s not a fan of spinach but there’s just enough in there to be interesting but not so much that this tastes like a spinach quiche. The two cheeses work really well together. And not a heavy quiche – light and yummy! Thank you for a great recipe!
I made it and became too watery. The next time I’ll put some foil on top.
If I half the recipe, do I decrease the cook time?

Recipe in progress. Just did my quick release. I made it in my 3 qt with a 6″ cake pan insert. The ingredients fit just fine.
I plan to let the quiche cool then flip it to cut into 6 pieces for grab-&-go weekday late breakfast or lunch.
I wonder if a parchment lined spring pan might be easier for removing than using a greased souffle or cake pan.
How many servings would you say this yields and can it be doubled? Would the cooking time change if doubled?
I’m planning on cooking for a family of 9.

This recipe makes six pieces. It would be tricky to double the recipe, because Instant Pots are only so large. If your quiche (or souffle) dish is deep enough, you might be able to fit 1 1/2 recipes in it. In which case, I would pressure cook it for just 5 minutes longer… 35 minutes total.

I see similar recipes with eggs that require the dish be tightly wrapped in foil or have a cover over the dish. Would using a cover when making this quiche change the texture or have any other impact on the outcome ?

Since this quiche is made in the Instant Pot, it is covered with a locking lid. There’s no need cover it again inside the pot.

Can this recipe be made in Air Fryer

After we made this in the Instant Pot it was a little too fluffy for my husband. He put his slice in the Air Fryer to firm up a bit. I liked it fluffy. Also I use cheddar cheese because thats what I had.
Can I make this without an Instant Pot? Directions for that?
Hi Penny, You could bake in at 350 degrees F for approximately 30 minutes. It’s not quite as soft and silky, but still very tasty. :)
