Mother’s Day

When I think of my mom, three words come to mind: Tender, Wise, and Selfless.

Over the years my mother has listened with endless patience, offered insightful counsel, held her tongue when I didn’t take her advice, and given of herself more freely than any person I’ve ever known.

She taught me the delicate balance of give-and-take in relationships. She taught me to hold my personal character with the utmost importance.

I will never forget watching her help those less fortunate, even when our family resources were low. Or watching her stand her ground to protect our family when she felt our values were under attack. She is a tribute to motherhood; I’m so very blessed to have her.

I only hope one day my children will think of me the way I revere my mother.

Mother’s Day shouldn’t be the only day we celebrate our mothers, but it is a wonderful reminder to stop and recollect the countless lessons they’ve taught us. Mom’s have a way of speaking into our lives like no ones else.

A Meal for Mom

For 18 years, KitchenAid has supported the Susan G. Komen for the Cure with their Cook for the Cure Project by making donations off every pink item sold, and inspiring us to join the fight against breast cancer, for our moms, and for us all.

This year, the Cook for Your Mom Campaign encourages us to skip the crowded restaurants and make mom a home-cooked meal, like she’s been doing for us all along.

Cooking for your mom shows her that she is worth more than the few bucks you’d spend taking her out to lunch; she is worth your time.

Oven Roasted Salmon

Salmon is one of my mom’s favorite foods, so this year I thought I’d make her roasted salmon with creamy horseradish and pink peppercorn sauce.

This Roasted Salmon with Pink Peppercorn Sauce is a delightful way to celebrate mom and is delightfully easy to make.

How to Bake Salmon

  1. Preheat the oven to 400 degrees F. Line a baking sheet rimmed baking sheet with parchment paper.
  2. Place the salmon fillets on the baking sheet and brush with olive oil. Salt and pepper liberally.
  3. Roast in the oven for approximately 12 minutes, until just barely cooked through.

Pink Peppercorn Sauce

The pink peppercorns, along with a nip of horseradish and fresh dill, provides a lovely burst of flavor over this rich, tender roasted salmon.

Place all the ingredients for the pink peppercorn topping in a blender, puree until smooth.

Serve the roasted salmon warm, with a generous drizzle of sauce and a sprinkling of extra pink peppercorns.

Ingredients

For the Roasted Salmon:

  • 2 1/2 pounds fresh salmon fillets (about 6)
  • 1 tablespoon olive oil
  • Salt and pepper

For the Pink Peppercorn Sauce:

  • Preheat the oven to 400 degrees F. Line a baking sheet rimmed baking sheet with parchment paper.
  • Place the salmon fillets on the baking sheet and brush with olive oil. Salt and pepper liberally.
  • Roast in the oven for approximately 12 minutes, until just barely cooked through.
  • Meanwhile, place all the ingredients for the pink peppercorn topping in a blender, puree until smooth.
  • Serve the roasted salmon warm, with a generous drizzle of sauce and a sprinkling of extra pink peppercorns.

  27. One thing I love about my mom, shes not a quitter, never has been and probably never will be. She amazingly raised 3 kids on her own without any help, sometimes even working 2 jobs, we never, never went without nor did we ever know that we were not the norm, she made our lives amazing! And then when we all grew up, she had the biggest challenge of her life, cancer and in true mom style she didnt quit, its amazing how you can be faced with such a disease and come up with a smile on your face, MOM I love you!!

  53. My mom told me in jr. high that I didn’t need to take homemaking. If I couldn’t learn it from her, we were all in big trouble. She had a catering business when I was in elementary school, and my sister and I were always her test subjects. From fondue to frogs legs, home made bread to (ick) brains….we had to at least sample it. Not to mention learn to cook! My husband would probably be 45 lbs lighter if it weren’t for his wonderful Mother-In-Law!

  144. My mom was an amazing woman. She was ALWAYS happy and full of joy. She was my best friend. My moms eyes twinkled with the love she had for her family. She was just the happiest person, filled with the spirit of life, even through her 6 years of suffering with bone cancer from breast cancer. She was my hero all through my life time with her. She always had a positive outlook on life. Her smile permiates my soul.

  176. My mom thought me how to keep house and make great meals for my family.

  177. I was raised by my grandmother so I consider her my mom. What I love most about her is how crazy she can be.

  178. My Mom was a great person, almost everyone you met loved her. She passed away in January of 2006. She worked at a Childrens Daycare for 15 years and her kids loved her. She started out helping with the kids and then moved up to the cook. They all loved her cooking and, to this day, when I meet up with one of her kids they tell me how much they love and miss my Mom. I miss sharing my day with her. Her birthday in on May 11 and, every so often Mother’s day would happen to fall on her birthday and we’d get to celebrate both together. She was a special lady and I miss her so much, especially this month.

  183. I love my Mom so much, she’s not only beautiful on the outside but the inside as well! I was actually born on Mother’s Day and I was her very first present as a new mother. She has made every day special since and my Mom gives of herself daily to make everyone around her happy and comfortable in any way she can. Funny her favorite color is Pink too, as was her Mother and her Grandmother! Right now she is standing strong by my Aunt’s side as she is helping her through the fight for her life from this terrible disease, breast cancer. She was our scout leader, soccer coach (no one else would and she didn’t know how to play), and always had time for our friends. She was a kind loving woman who always thought of everyone elses needs or her own . Many times ignoring her own health . She passed away from liver cancer and has it left a hughe hole in all our lives . My one regret is that my children didn’t get to meet her.

  317. My mother was a wonderful lady. She lost her battle with breast cancer at the young age of 49 when I was only 19. I love that she was a fighter and fought to stay with us with all she had.

  346. One thing I love about my mom, shes not a quitter, never has been and probably never will be. She amazingly raised 3 kids on her own without any help, sometimes even working 2 jobs, we never, never went without nor did we ever know that we were not the norm, she made our lives amazing! And then when we all grew up, she had the biggest challenge of her life, cancer and in true mom style she didnt quit, its amazing how you can be faced with such a disease and come up with a smile on your face, MOM I love you!!

  392. The thing I love most about my mom is that although she passed on 5 years ago, I can still hear hear voice, remember her touch, her laugh, her tears. I love how what she taught me fsuch as being to read to being able to distinguish right from wrong and to hold myself accountable for my actions at all times has never failed me or my children.

    The love, understanding and wisdom she shared with me helped me raise my kids to be not just independent and reliable but loving and tolerant of others and tough situations.

    And what I remember the most is that I loved her with all my heart and soul. Still do…

  403. I miss my Mom and loved so many things about her. She died in 1992 of breast cancer and has missed so much. Mom was a terrific baker and taught me everything she knew about baking. Mom was always put together with light makeup, her hair fixed and nicely dressed. She was a hard worker and loved her children. Miss you mom!

  414. I imagine it’s hard for anyone to pin point one exact thing they love the most about there mother. You can’t define or draw a line in the sand for what exactly a mother does for a child. It’s a lifetime of trust, nurture, being a pair of arms to hold you through the bad times, having a smile from ear to ear through the good times, and the absolute unconditional love that makes my mother and every mother the reason why they are so precious and irreplacable to us.

    Her hugs and how she would tuck us in at night and give us a kiss and say sweet dreams honey.
    There are many things I love about my Mom and soon she won’t be with us as she is
    battling cancer. But we will have many many memories to remember her by.

I could go on and on and she is very missed by all of us. My sons have taught all of their children about what wonderful people she and my father were.

  551. The thing I most admire about my Mom is her commitment to community service. She is gone now, but after she passed, a youth group got many volunteers together to host a free dinner at the local fairgrounds in my Mom’s memory. It was awesome!

  556. What I love about my mother is that she goes with her gut feelings and does research instead of relying 100% on what the doctor says. If she had listened to the doctor, I would have ended up in an institution for the mentally retarded. Also, she had to keep pushing the doctor about my hearing loss. It took until I was four years old to finally find a doctor that said that I was hearing-impaired. And by the way, I’m not mentally retarded. I aced my way through school!

    • Thank God for your Mother and all mothers who follow their heart and do the right thing. My parents (and my mother) did the exact same thing. Out of us six children, three of us were Deaf and all grew up and have rich productive lives.

      • We ARE very fortunate to have wonderful parents. Having been in the program for the hearing impaired through middle school (I was mostly in regular classes but having a special ed. teacher there to help was a godsend), I’ve kept in touch with many of my former classmates. They are all doing well.

  574. Right now I am at my parents’ house, and my 86 year-old mother is in the kitchen preparing his birthday dinner. How awesome is that? She is an endless powerhouse of energy, always reading her recipe books at night: “research” she calls it, for planning the next day’s and week’s menus. A true inspiration. Thanks for the reminder that so many are celebrating Mothers Day in so many different ways.
    I am aware how truly blessed I am that I still have her around.

  664. My mom would have loved this but she passed when I was only 32 (20 years ago). She loved pink! I loved her spunk out of all things and her daring. Even after a stroke, she relearned how to bowl, how to write with her left hand, went to Hawaii and took part in all the activities they had to offer. I try to do the same.

  671. the thing I love most about my Mom is how she has always managed to keep her home immaculate – you can literally eat off her floors – it’s been that way all my life and i’m 53 – she’s 76 this month

  685. Even with 4 kids my mom still finds the time to volunteer and donate her time and energy. I’m constantly in awe of how much she can give.

  689. That’s a Hard Question to answer! I mean, I love everything about my mother. . . I love her for being my mom, and I love the person she is. . . And I love that she raised me with morals and helped me in all aspects of life to make/lead me to who I am today.
