The other day I was thinking, it doesn’t seem fair that Christmas is the only holiday we celebrate with fudge. Independence Day doesn’t get fudge. Easter…… no fudge.

Heck, not even Thanksgiving gets its own fudge. Yet at Christmas we make pounds of it in all different varieties.

I don’t know about you, but if I were a holiday I would revolt.

So today I’m serving up smooth creamy 4-Ingredient Pistachio Gelato Fudge for St. Paddy’s Day.

I do apologize if this recipe concept is a little confusing. It’s green for St. Paddy’s day, yet tastes like Italy. However, if I had used a traditional green Irish ingredient we would have ended up with cabbage flavored fudge. I figured you would forgive me on the less than authentic recipe.

Although it isn’t Irish, this 4-Ingredient Pistachio Gelato Fudge is authentically divine.

Our 4-Ingredient Pistachio Gelato Fudge is ultra soft and silky, with the mellow nutty note of pure pistachio, and bits of crunchy green pistachio pieces speckled throughout.

This easy microwave fudge recipe takes less than 5 minutes to prepare and includes only 4 ingredients: Sweetened Condensed Milk, Almond Bark, Pistachio Extract, and Chopped Pistachios. (You can add green food coloring if you like.)

You simply melt, stir, and pour it into a baking dish to cool. After the fudge hardens, cut it into squares and prepare to melt with delight as it melts in your mouth.

We even keep our Pistachio Gelato Fudge in the freezer so you truly get the frozen gelato essence!

4-Ingredient Pistachio Gelato Fudge

Simple and silky 4-Ingredient Pistachio Gelato Fudge, makes you feel like you're sitting in a piazza in Italy!
Servings: 49 squares

Ingredients

Instructions

  • Pour the sweetened condensed milk in a large microwave-safe bowl. Roughly chop the almond bark and place it in the bowl. Microwave in 1 minute increments, stirring in between, until the mixture is totally smooth.
  • Meanwhile line an 8x8-inch baking dish with foil. Once the fudge mixture is smooth, stir in the pistachio extract and chopped pistachios. Add green food coloring if desired.
  • Pour the fudge into the prepared pan and place in the refrigerator for at least one hour. Then flip the hardened fudge out onto a cutting board and peel off the foil. Trim the edges and cut into 49 squares. Keep in an airtight container at room temperature, or in the freezer!

Notes

Almond extract has a similar flavor and can be substituted, but the pistachio extract is wonderful!

    Im from Australia and would love to make this recipe. Whats a substitute for the almond bark? Is almond bark just white chocolate with almonds in it? Can I just use white chocolate?

  4. I stumbled upon this recipe on Pinterest & just KNEW I had to make it for my mother who is a pistachio fanatic! She LOVES the Talenti brand Sicilian Pistachio Gelato & eats it by the pint so I knew this would be right up her ally. I’ve recently gotten her hooked on Blue Bell’s Pistachio Almond ice cream flavor, so when I couldn’t find pistachio extract I stuck w/ pure almond extract, knowing that she would appreciate the flavor. This fudge is UH.MAY.ZING!!! I loved it & I’m not usually big into sweets of any kind… It was creamy & nutty & delicious, & with the 2 drops of green food coloring I added it was a beautiful light green. It’s in a St. Patrick’s Day care package on it’s way to Savannah right now! Thanks! :)
