The waffles are made crispy by adding cornstarch to the batter, then keeping them in the oven (to dry and warm) until ready to serve.
Steam from the waffle maker is the culprit of having soft or soggy waffles, but adding the cornstarch and drying in the oven make a huge difference. Donโt skip these two steps!
Start to finish, a full batch of the fluffiest, crispiest, most tender waffles only requires about 30 minutes to make, and can easily be frozen for your breakfast meal plan.

How to Make Crispy Waffles
- First, preheat a waffle maker to high heat. Set the oven on 200 degrees F. Set a baking sheet with a rack on it in the oven to hold and warm the waffles. The rack will make sure the waffles donโt get soggy!
- Meanwhile, in a large mixing bowl, combine the flour, cornstarch, sugar, baking powder, and salt. Whisk well.
- Then mix in the milk, eggs, melted butter, and vanilla. Stir until the mixture is very smooth.
- Once the waffle maker is very hot, add approximately ยฝ cup batter (for a large Belgium-style waffle), making sure the batter is evenly distributed. Cook for 3 ยฝ minutes undisturbed. Check your waffle just as the timer goes off, and remove the waffle when the exterior is golden-brown.
- Move the waffle to the warm oven and repeat with the remaining batter. PRO TIP: The warm oven helps remove steam from the waffles, making them extra crispy. Donโt skip!
- Once all the waffles are cooked, let them rest in the oven for another 5 minutes to continue to dry and crisp.
- Serve warm with your favorite toppings.

Simple Waffle Tips & Tricks
- Don’t over-mix the waffle batter! You want the batter to be smooth, but definitely not over-mixed. This can result in tough or rubbery waffles!
- Be sure to preheat the waffle maker and lightly coat with vegetable oil to prevent sticking!
- The waffle batter will expand as it cooks, so fill the waffle maker until almost the whole bottom is filled but not all the way!
- To clean the waffle maker, let it cool completely and then wipe down with a damp sponge or cloth, and then dry! Avoid using anything that isn’t rubber to scrape any pieces that are stuck, since it might ruin the nonstick coating.
Frequently Asked Questions
What is the difference between a waffle and a Belgian waffle?
The main difference between regular waffles and Belgian waffles is the size of the pockets. Belgian waffles have extra deep pockets for more filling to go into them! This will depend on the kind of waffle maker you have.
What is the secret to making good waffles?
There are a few different things that can ensure you will make amazing waffles at home. First and most importantly, make sure your waffle iron is nice and hot before starting! Preheating is key to get a crispy outside. Also, add cornstarch to the mix like I did in this recipe! It ensures crispy yet fluffy waffles every single time.
How long do these waffles stay fresh?
Leftover waffles can be kept in an airtight container in the fridge for a day or two, and keep well in the freezer for up to 3 months. Reheat in a toaster or the oven for maximum crispiness!
Can This Homemade Waffles Recipe Be Made Gluten-Free?
Absolutely! Simply swap all-purpose flour with your favorite gluten-free baking substitute. But keep the cornstarch, itโs already GF-friendly!
Can I use dairy free milk?
Absolutely! This recipe will still work if you used coconut milk, almond milk, oat milk, or soy milk!
Can I use my electric stand mixer for the batter?
Yes, you can! Just make sure that you do not overmix the batter with the stand mixer.

This is the only waffle recipe I use. I love the flexibility of being able to use butter or oil. Iโve done both and still perfect. I also only use olive oil. Thank you for sharing. This will be going on an index card for my kids. ๐
The absolute BEST gf waffle Iโve ever had! I will never make another gluten-free waffle recipe aside from this one 10/10
It was really good and fluffy on the inside, crisp on the outside. This will be our new go-to homemade waffle recipe. Totally recommend. Very easy…my 17-year-old made them as part of breakfast for dinner…yummy!
Deliciously crispy waffles that held it shape well and rose beautifully. I substituted plain flour with self raising flour and also heated up the milk.ย
I’ve tried several waffle recipes and this one is the BEST if you want crispy on the outside and soft on the inside. I used this recipe for the first time & my husband loved the taste & texture ~ definitely a keeper.
Made these last night for the family. We all LOVED them! The taste and texture were perfect – we will be making these again. :)
My second time making this. My son loves this recipe.
Is it possible to keep the left over batter in a fridge just in case I do not want to cook it all?
Hi Connie!
The batter should be fine for 24-36 hours in the fridge. After that, it might not rise well when cooked.
You can also just freeze the made waffles and pop them in the toaster when you want to use them.
This really is the best waffle recipe! They are crispy on the outside and light and fluffy inside. They’re an immediate family favourite!
Easy to make and delicious to eat. ย My granddaughter said they were the best!!
These were wonderful. ย Much easier than the waffle recipe I usually use, which requires separating eggs. ย This will be my new go to for waffles! ย Thank you for the clear, concise directions.
Really loved this recipe (I’ve tried many)!!!
Easy to put together, no fuss and super tasty waffles with a nice texture and would be good crispy too, but we ate them right off the waffle iron! Perfect! Finally! Thank You!!! E :)
