Now, we are certainly not hating on “traditional” fries – we love ’em! But there is no reason to box yourself into only enjoying those made with potatoes. These Air Fryer Jicama Fries have that crispy outside and soft inside you crave, but are made with healthier jicama and way less oil than deep frying.
What do jicama fries taste like?
Jicama is a root vegetable that tastes like a cross between a potato, apple, and water chestnut. They are lightly sweet and a bit earthy, with just the right amount of starchiness to keep them crisp when fried.
Ingredients You Need
- Jicamas – buy them firm with smooth skin
- Olive oil – or other preferred high-heat oil, like avocado oil
- Spices – salt, garlic powder, cayenne pepper

How to Make Jicama Fries in the Air Fryer
Set out a large sauce pot and fill it with water halfway.
Use a vegetable peeler to peel the jicama. Then carefully slice into fries that are ½ inch thick with a sharp knife.
Place the fries in the water as you cut. Why? Like potatoes, it is best to keep fries in water so they don’t oxidize and brown.
Once you’ve cut all the fries, set the pot over medium-high heat. Bring the water to a boil and boil the jicama fries for 10 minutes to soften. Drain well in a colander.
Once the fries have parboiled, preheat the air fryer to 400°F.
Pat the fries with a paper towel then place them in a large bowl. Drizzle with olive oil.
Sprinkle with salt, garlic powder, and cayenne. Toss well.

When the air fryer is hot, add a couple of large handfuls of jicama fries to the air fryer basket. They can overlap a little bit but make sure to not overfill the basket.
Air fry the jicama fries for 12 to 16 minutes, stopping to shake the basket in the middle of the cooking time.
Repeat in remaining batches if needed. Keep the cooked fries warm in a low temperature (about 200°F) oven.
