Why Baking Fish is the Best

Although pan-fried snapper or grilled Mahi Mahi are fabulous, it is my belief that baking fish is the easiest way to produce perfect, moist, flaky fish every single time.

Why? Since the fish is not directly against the heat source, like a hot grill or skillet, it cooks slower and more evenly, even when the oven is set on high heat.

That means it’s harder to over-cook the fish in the oven, than it is on the stovetop or grill. Whether you are a novice cook or a skilled chef, baking is your best bet for consistently delish fish.

Also, it should be stated that perfectly cooked fish should be just barely cooked through. It should be ultra moist, a little firm, and just begging to flake.

Ingredients You Need

  • White Fish – Your favorite variety: Cod, halibut, mackerel, flounder, grouper, snapper, etc.
  • Mayonnaise – A thin layer of mayo acts as the glue that holds the crust to the fish.
  • Everything Bagel Seasoning – Some brands are called “Everything But The Bagel Seasoning” but you get the picture. The blend should include minced garlic, onions, sesame seeds, and poppy seeds. If you can’t find it at the market, you can blend your own!
  • Almond Flour – Just plain ground almonds. Grind your own or pick up a bag from the store.
  • Lemon Pepper Seasoning – The simple blend of dehydrated lemon, black pepper, and salt is a great way to add a little extra zest!

Brush the fish. Coat the fish with a very thin layer of mayonnaise.

Sprinkle, Pat, or Dunk. Apply the crust coating to the fish fillets in whatever way is easiest for you. If your fish fillets are thick and easy to handle, you can dip them in the coating.

Frequently Asked Questions

Is it Better to Bake or Broil Fish?

That depends… If your fish is very thin, you can broil it in a short amount of time to create a crispy exterior. This works particularly well when you are cooking the fish with the skin attached, skin-side-up. Or when cooking thin fish fillets with a crunchy coating. However, if you try to broil thicker fish fillets, the outside might turn too crisp and tough before the inside is cooked through. When in doubt, bake it!

What Kind of Fish is Good for Baking?

Really, all fish varieties you find at the market can be easily baked, no matter the thickness. Baked salmon, sea bass, and grouper are personal favorites.

What Are Examples of White Fish?

Oh, there are so many! Cod, grouper, halibut, haddock, sea bass, orange roughy, sole, flounder, tilapia, ono, pollack, just to name a few.

What is the Best White Fish?

My favorites are sea bass, ono, and grouper. Yet most fresh white fish are light flaky and do not have a fishy flavor. The fishiness comes from sitting around for days in the market. So be sure to buy fish as fresh as possible.

How Long Should You Cook Fish in the Oven?

That all depends on the thickness of your fish fillets. Generally speaking, thin fillets should cook for 10 minutes, while thicker fillets cook for 15+ minutes. Both at 400 degrees F.

How Do You Know When Fish is Done Cooking?

When fish is perfectly cooked, it looks slightly puffed, moist, and even weepy. It might also have a crack or two in the crust. However, if it looks dry it is overcooked.

Is Baked Fish Healthy?

Yes! Especially if you use a healthy crust or sauce. Fish is full of vitamins, nutrients, and healthy fats.
