Was looking for a way to use up some bell peppers ..This recipe is excellent, Thanks for the share.. Chopped up the peppers and red onion into smaller pieces plus I added diced cucumber…very appetizing

Oh my word!! This salad is awesome! Just made it today and I can’t stop eating it. I was on the fence about the mint being that I’ve never used it as an ingredient in cooking but I was wrong. It blends together well. 😀

Seriously delicious! The fresh mint makes it next level. It got better with time too. Made a double batch and used it all week. The vegetables had a pickled like quality and were delicious on sandwiches, wraps, rice and leaf salad.
