Why strawberry pudding? I have found most people either think of banana pudding as completely alluring, or totally gross.
Yes, it’s true. Not everyone likes bananas.
Yet almost everybody loves strawberries, for obvious reasons. They are tangy, sweet, and blushing with berry flavor.
Using frozen strawberries packed in syrup makes it easy to cook perfect strawberry pudding year-round.
And yes, you do need to cook it, but just for a few minutes.
Our Favorite Pudding Recipe (From Scratch)
Because instant pudding mixes are readily available, most people don’t realize how easy it is to make pudding from scratch.
What is pudding, really? Milk, sugar, a thickening agent, and flavoring. That’s pretty much it.
Our easy made-from-scratch strawberry pudding requires just a handful of ingredients, mostly found in your pantry.
The secret ingredient in this recipe, used for flavor and additional thickening, is cream cheese.
The cream cheese gives the pudding a lovely strawberry cheesecake flavor, and allows the pudding to set a little more firm than normal puddings, so it can be easily lifted out of the pan.

Of course not! You can make this bright berry pudding and enjoy it as-is. It tastes fresh and creamy, even without the whipped cream.
However, the idea of a southern-style pudding is that it offers varied tastes and textures in the same treat.
The cookies create a base for the pudding to rest on. They absorb some of the moisture from the pudding and whipped cream, so they soften and are easy to cut, almost like a thin cake layer.
Layering the pudding elevates the overall appeal, making it a dessert you will be proud to share with friends.
Strawberry Pudding Ingredients You Will Need
For the Strawberry Pudding:
- Frozen sliced strawberries in syrup – I like to keep these in the freezer so I can make this pudding on the fly. Make sure to thaw before using.
- Whole milk
- Cream cheese – For flavor and thickening.
- Granulated sugar
- Cornstarch – For additional thickening.
- Vanilla extract
- Salt – Just a little!
For the Whipped Cream:
- Heavy cream
- Granulated sugar
For Assembly:
- Pepperidge Farm Chessmen Cookies – Instead of vanilla wafers.
- Fresh strawberries – To garnish the top.
How To Make Pudding
- Puree – Blend all the strawberry pudding ingredients until very smooth.
- Thicken – Pour the pudding mix into a saucepot and simmer over medium heat.
- Whip – Make fresh whipped cream using heavy cream and sugar.
- Layer – Stack Chessmen shortbread cookies, strawberry pudding, more cookies, whipped cream, and fresh berries.
- Chill – Place the southern pudding in the refrigerator for a few hours to chill and set.

Homemade Strawberry Pudding Recipe
Ingredients
For the Strawberry Pudding:
- 16 ounces frozen sliced strawberries in syrup, thawed
- 3 1/4 cups whole milk
- 6 ounces cream cheese
- 2/3 cup granulated sugar
- 1/3 cup cornstarch
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
For the Whipped Cream:
- 2 1/2 cups heavy cream
- 1/4 cup granulated sugar
For Assembly:
- 14.5 ounces Pepperidge Farm Chessmen Cookies (2 bags)
- 1 pint fresh strawberries
Instructions
- For the Strawberry Pudding: Set a medium saucepot on the stovetop, and pull out a blender. In the blender, combine the strawberries in their syrup, milk, cream cheese, sugar, cornstarch, vanilla extract, and salt. Cover and puree until very smooth. Then pour the mixture in the saucepot.
- Simmer the strawberry pudding over medium heat, stirring consistently until the mixture is smooth and thick. Remove from heat. (Note: The pudding will thicken more as it cools, so don't let it cook too long. 5-6 minutes at the most.)
- For Assembly: You will need 15 small whole strawberries or 15 large strawberry halves for the garnish. If needed cut large strawberries in half.
- Pull out a 9X13 inch baking dish. Arrange one bag of Chessmen cookies in a single layer on the bottom of the baking dish.
- Scoop the strawberry pudding over the Chessmen cookies. Spread it out into an even layer. Arrange the second bag of Chessmen cookies over the top of the pudding.
- For the Whipped Cream: In a stand mixer, combine cold heavy cream and sugar. Using the whip attachment, whip the cream on high until firm.
- Once the pudding has cooled 5-10 minutes, spread the whipped cream over the top of the cookies. Top the whipped cream with 15 strawberries. Chill for 1-2 hours before serving. The pudding should be firm enough to cut and lift out of the pan, supported by the cookies.

I use Chessmen cookies in Banana Pudding too. Â Because, you know, they are just better, being made with real butter. Â And have you seen the darling little mini size Chessmen cookies? Â Too die for. Â Good for layered desserts made individually.
