How to Make Dairy-Free Vegan Avocado Ice Cream
This homemade ice cream recipe is ridiculously easy with the help of a blender and an ice cream maker.
Instructions
First, place the coconut milk, sugar, and a pinch of salt in a medium saucepot. Set it over medium heat and stir until the sugar dissolves and the coconut milk isΒ perfectly smooth. The moment the mixture is smooth, turn off the heat. The hotter the mixture is, the more time it takes to cool, so donβt let it heat for too long.
Now pour the coconut milk into the blender.
Pit the avocados and scoop the flesh out of the skins. Then add the avocado flesh and freshly-squeezed lime juice to the blender.
Cover and puree until smooth.
If the mixture is still warm, chill to room temperature or cooler. Once the ice cream mixture is cool, pour it into an electric ice cream machine.

You can use any sweetener you like that can be measured in 1-to-1 proportion to the sugar. As for the coconut milk, I would stick with full fat, so that it has a rich ice cream texture.
