This Greek Chicken Marinade recipe makes a great marinade for classic grilled (or baked) chicken with zesty herbs and spices. The meat needs to sit for as little as 30 minutes or up to four hours. Quickly prep when you get home in the evening, and you can still have dinner on the table in under an hour.

The specific combination of olive oil, lemon juice, zest, and herbs gives it a Greek flavor, so it’s perfect to put on Greek salads or use in Gyro-style wraps. However, this grilled chicken can be served with any side dish for healthy and flavorful main dish protein.

How to Make Greek Marinade for Chicken

Set out a 9 x 13-inch baking dish or large shallow bowl. In the dish, combine the olive oil, 1/4 cup of lemon juice, 2 teaspoons lemon zest, minced garlic, parsley, oregano, salt, thyme, black pepper, and crushed red pepper, if using.

Then place the chicken pieces in the marinade and flip to coat. Cover the baking pan with plastic wrap and refrigerate for at least 30 minutes, and up to four hours.

Pro Tip: When it comes to marinating, longer is better! So if you have the time I highly suggest waiting for the full four hours.

When ready to cook, preheat the grill to medium heat, approximately 350°F to 400°F. When the grill is hot, grill the chicken for 5 minutes per side.

How to Bake Greek Chicken

Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper and placed the chicken pieces on it, making sure they do not touch.

Bake for 15 to 20 minutes, until the thickest piece is cooked through.

Serving Suggestions

Let the chicken rest for several minutes before slicing and serving with fresh chopped parsley and lemon wedges.
