Each little energy bite is packed with oats, flax seeds, and nut butter to fill and energize you. Then a little sprinkling of chocolate chips and raisins provides that sweet satisfaction we need to stop a downward spiral.

No-Bake Oatmeal Energy Balls taste like oatmeal cookies, making them a wonderful addition to lunchboxes. Yet I like to save my energy ball for about 3pm, when the afternoon slump hits.

No-Bake Oatmeal Energy Balls Ingredients

  1. Quick oats – Using quick oats is a great start, because they are already partly broken so they mix well into the energy ball batter.
  2. Flax seeds – Since this recipe is vegan eggs are not used to hold the balls together. Therefore ground flax seeds (mixed with any liquid) create a gel-like texture that glues the balls together. Plus, they provide fiber and fatty acids.
  3. Shredded coconut – For extra healthy fat and flavor.
  4. Nut butter – Use any type of nut butter you like (peanut, almond, cashew, or sunflower seed butter). Plain old peanut butter is my personal favorite!
  5. Vanilla Extract, cinnamon, nutmeg, and salt – These ingredients create the well-rounds cookie taste.
  6. Maple syrup – A wonderful sweetener and binder.
  7. Raisins – To continue the oatmeal cookie appeal.
  8. Vegan Chocolate chips – Or traditional chocolate chips, if you are not vegan.

How To Make No-Bake Oatmeal Energy Balls

This no-bake energy bite recipe is so simple, your kids could make it themselves!

  1. First, grind the flax seeds in the food processor. They do not need to be ground into powder, but they do need to be broken up a little.
  2. Then add the oats, coconut, nut butter, vanilla, maple syrup, and all spices. Pulse until the mixture comes together into a smooth dough.
  3. Mix in the raisins and chocolate chips by hand.
  4. Roll the dough it into tight little balls with a cookie scoop onto parchment paper.
  5. Place the energy balls into an airtight container and keep them refrigerated until ready to serve.

What if I don’t own a food processor?

You can grind the flax seeds in a coffee grinder or blender. Then mix all remaining ingredients together with an electric mixer.

Can I use honey instead of pure maple syrup?

Yes, you can! However, then this recipe is no longer vegan. If that doesn’t matter to you, go right ahead. 

Can I add additional spices?

Of course! Cloves and allspice are good options.

Can I make a substitution for the raisins and/or chocolate chips?

Yes, dried cranberries and cherries are a good choice. Or if you want to stick with chocolate, you can do dark chocolate chips. For a crunch, you can even add some chopped pecans or walnuts. 

How long do these bites last?

You can keep them in the fridge for 7-10 days.

These simply vegan No-Bake Oatmeal Energy Balls, offer a healthy boost right when you need it… And they taste just like oatmeal cookies!
Servings: 25 balls

Ingredients

Instructions

  • Place the flax seeds in a food processor. Grind the flax seeds until they start to break up. (They do not have to be fully ground into powder.)
  • Add the oats, coconut, nut butter, vanilla, cinnamon, salt, nutmeg, and maple syrup. Turn the processor on high and mix until the ingredients form a thick consistent crumble.
  • Add in the raisins and chocolate chips. Mix these ingredients in by hand.
  • Use a 1 ½ tablespoon cookie scoop to portion out even balls of dough. Roll the dough into tight balls.
  • Place the energy balls into an airtight container and keep refrigerated until ready to serve.

  1. These energy balls are delicious. Would have been so much easier to make if I’d had a decent food processor. Resorted to using hand blender to mix the very stiff dough together. Was cleaning blades between zaps and yes, that last time I had my finger on the trigger. I’m an idiot! Blade cut finger and right through top of SNS nail. Luckily finger wasn’t over bowl of dough at the time…forensic spatter! Hubby had to form the balls for me. He was shaking his head in disbelief, trying not to laugh I think. Balls definitely worth all the trauma. Thank you for another wonderful recipe, Sommer.
