Chicken Detox Soup

Over a year ago I shared a Chicken Detox Soup recipe that our family uses as a dietary reset after vacations or long seasons of unhealthy eating.

It’s a lean, healthy chicken and vegetable soup with several detoxifying ingredients to help flush toxins from your body and boost your metabolism.

This soup is meant to be eaten for several days in a row to get your system back on track.

Chicken Detox Soup is low fat, low carb, paleo, gluten-free, and it works like a charm when using the soup as a cleanse!

Our first detox soup was very well received. Many of you have made it, left positive comments, and asked for variations.

Southwest Chicken Soup

Well, today is the day! We’ve heard your requests and have come up with another detox soup recipe that is just as healthy, just as tasty, and offers just as many cleansing ingredients.

If you’ve tried our original detox soup cleanse, this Southwest Chicken Detox Soup is a zesty way to mix things up.

How to Make Detox Southwest Chicken Soup

To make this Southwest Chicken Soup, I used Old El Paso Green Chiles to give the broth a smoky undertone, then loaded it with:

  • Skinless chicken breasts for lean protein
  • Cabbage, broccoli, avocado, garlic, and turmeric… All detoxifying ingredients that help your body release toxins
  • Ground cumin and crushed red pepper for additional southwest essence

Ingredients Checklist

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 large onion, peeled and chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 3 cans Old El Paso Chopped Green Chiles (4.5-ounce cans)
  • 14.5 ounces “fire roasted” crushed tomatoes
  • 3 quarts chicken stock
  • 1 tablespoon ground cumin
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoons turmeric
  • 2 1/2 cups sliced carrots
  • 4 cups chopped cabbage
  • 3 cups small broccoli florets
  • 2 avocados, peeled and diced
  • Salt and pepper

How To Make Detox Soup

Instructions…

Set a large 6-8 quart pot over medium heat. Add the olive oil, chopped onions, and garlic. Sauté for 5-6 minutes to soften. Then add whole raw chicken breasts, Old El Paso Chopped Green Chiles, crushed tomatoes, chicken broth, all the spices, carrots, and 1 1/2 teaspoons sea salt.

Bring to a boil, lower the heat, and simmer for 20+ minutes, until the chicken breasts are cooked through. Then remove the chicken with tongs and set them on a cutting board to cool.

Add the chopped cabbage and broccoli to the pot. Continue to simmer to soften the broccoli. Meanwhile, shred the chicken breasts with two forks, and stir them back into the soup. Once the broccoli is tender, taste, then salt and pepper as needed. Serve warm with a generous amount of diced avocado on top!

If the soup base boils down too much, add 2-3 cups of water to the broth. Then taste for seasoning.

You can store this recipe in an airtight container in the refrigerator for 4 to 5 days or in the freezer for up to 3 months.

Southwest Chicken Detox Soup Recipe – A healthy low-fat, low-carb, gluten-free soup with tons of flavor. This southwest chicken soup packs a punch!

  11. My husband and I LOVED this soup but eating it twice a day for a few days I broke out in awful hives. It took me all week to realize it was the soup.  It didn’t affect my husband.  I later read that this can be a side affect of detoxing. After two days off the detox my hives are completely gone.

  19. I just made this and stuck to the recipe except for using 2 quarts of chicken stock instead of 3 (pot wasn’t big enough). I liked it! I put some sour cream in my bowl with the avocado. Good flavor and very healthy.

  21. Tastes so good, great kick of flavor and interesting combo. I used two boxes of 32oz chicken broth. Only had one chicken breast, so i added a can of garbanzo beans for protein. Lastly, I added lemon at the very end. Great recipe, thank you!

  34. Oh my gosh – I just found this recipe and made it last night and it’s so good! Very flavorful! I looked through the comments first to see if anyone had made this in an Instant Pot and didn’t see a final answer, so I tried it. Worked great! I used the sauté function and added the oil, onions and garlic and cooked for 3-4 minutes. I turned it off and added in all the other ingredients. Because I only have a 6 qt. instant pot, I could only add 2 qt. of the broth or it would have overflowed with all the other ingredients, but it was fine. I used one thawed and one partially frozen chicken breast. I set it to high pressure for 9 minutes, let it natural release for about 5 minutes and then did a quick release. I pulled out the chicken and shredded it, added it back to the pot and it was perfect! Thank you for this recipe!

    • I was very happy, Jennifer H.. to see your instant pot variation and followed it quite closely and it was SOOO good – the recipe itself is amazing but this made it easier for me – this time around I made my own broth from a carcass so I will have the chicken from that to use and feel good about the homade broth – my husband even asked for me to make another batch. NOW to stick to just that this week for my lunch!

  43. I’ve made this soup about 4 times now, my husband and I LOVE it… So flavorful, spicy, and delicious. It’s packed with nutrients and a kick of that spice him and I love. Makes a lot of soup but we don’t mind working out way through it during the week for lunches.     • Hi Taylor,

      I’m sure it can be. However, I have not personally tested this recipe in the Instant Pot, so I’m hesitant to give instructions. Maybe someone in our community has tried it in the IP. Any takers???

  47. Can this soup be made in a crock pot?

    • Hi Katie,

      Yes, you should still sauté the onions and garlic on the stovetop first. Then slow cooker on low for 4-6 hours, or on high for 2-3 hours. I would add the broccoli florets in at the end, when you shred the chicken and add it back in. They will only need a few minutes in the hot soup base to soften.

  48. This makes ALOT (12 cups of broth is needed) but it is delicious. I substituted broccoli with cubed zucchini and squash b/c I didn’t have broccoli in the house. I also added some kale too. Delicious! This recipe will be in permanent rotation now! Thanks

  49. I like this soup but there is no way all the ingredients fit into my 6 qt dutch oven. I could only fit 2 qts of the broth and it was up to the top. I couldn’t add the cabbage at the end. The soup is delish and more spicy since I couldn’t fit the last qt of stock or cabbage. I ended up adding a dollop of plain yoghurt on top since I can’t eat avocado.

  50. Made this recipe today and it was waaaay too hot for us! Next time i make it i will decrease the amount of red pepper. Otherwise it was a good soup. Would have given it a 5 except it had too much heat for us.

  54. I found this recipe on the internet. Cleaneatingchickensoup. I don’t use many prepared packages when I cook. You are what you eat, is my 2019 Motto and I have cleaned up my health and wellness. That said, The soup is delicious and spicy. I didn’t have the three cans of diced green chilies but had Rotelle Tomatoes so I substituted those for the chilies. My neighbor came by to see what smelled so good. She had a bowl and ask for the recipe. It delivered the spicy and wonderful southwestern taste. I can’t wait to see what my husband thinks.

  57. This was a major surprise. The soup had excellent taste. I did cut half the PEPPER down but otherwise kept everything the same. I added a half pound more chicken, a quart of liquid, a half of cauliflower and some kale. Sommer, I hope the additions I made still makes a detox soup. I will be eating this again whether I’m am detoxing on not.

  83. I made this on New Years and it was amazing. I mean, like really really amanzing. My husband RAVED over it and immediately asked when I’d be making it again. It definitely has some spice, but we all loved it.  
    As for my husbands second request… I am making it again as we speak. Thank you for this! 

  84. Wow! I am on a detox and was dying a slow death from the food and searched a chicken detox soup on Pinterest…to my surprise this soup is AMAZING! It tastes just like a tortilla chicken soup sans the fat and tortilla strips. I am never successful at preparing soups, but this one worked and tastes amazing…enough for my to comment on it. I prepared it for two and added more green chiles and it has some definite spice! It would however taste amazing with cheese and tortilla strips, but the avocado suffices.

    • Hi Jan,

      You can keep it in the fridge for at least a week, maybe up to 10 days. I have frozen it before with success. Just be sure to thaw it slowly at room temperate, before reheating.

Your pictures are very misleading.  12 cups of broth and all these ingredients do not fit in my larger than normal pot.  You NEED a stock pot for this.  I had to cook 2/3 of the broth with the chicken.  After I pulled the chicken, I added as much of the remaining broth that I could and mixed.  I then ladled a portion of the soup in another pot and cooked the broccoli and cabbage.  Pain in the butt.  Very good soup though.  

    • Cynthia – you must have accidentally changed the proportions (can do that in the recipe above – it’s interactive). This only calls for 3 cups of broth. 12 cups is 4 times the servings this one makes.

      • The ingredient list does call for 3 quarts of broth. Can you confirm that it should actually be 3 cups? I want to make this today and I want to make sure I have it right! :)

      • I have the same question as Jackie. I’d like to make this too, but confused as to whether to use the 3 quarts of broth as written in recipe or 3 cups as written in the comments.

        Sorry for the confusion here… It is 12 cups of chicken broth. It’s a large recipe, meant for leftovers, but it does fit in a 6+ quart pot.

  124. Made this in my instant pot. Cooked on Manual for 10 minutes then put on Sauté when I added the cabbage and broccoli while I shredded the chicken. Delicious. 

  125. Wonderful soup!! Very tasty. I used Tyson grilled chicken strips instead of cooking my chicken and it worked great! Also added some spinach I had leftover and some cauliflower and a can of black beans. Awesome!

  127. Hi I want to say this soup is very good. I am on the Dr. Hyman’s Eat Fat get Thin Diet and I can’t do salads any more. It turns my stomach. I ran across this and it fits into the diet being it is a stepping stone to Pagan Diet. I used bone in thighs and a whole 1/2 avocado. Very good and will make it again.

  137. This soup was awesome.  I was not expecting to really like it very much as I don’t like healthy foods.  However, I’m trying to change up our diet for a healthier lifestyle and this soup was addicting.

  138. Currently making this recipe as I am commenting. At first the flavors seem non existent, but give it time! Much like Spaghetti, Chili, etc I’m sure the flavors will be more bold the next day as I am already noticing that the longer it sits in that pot the stronger the flavors become. Love that this soup is healthy and hearty. The combined flavors compliment each other very nicely. So far I’m very happy with this recipe. Thank you for sharing! ☺️

  139. Why is the sodium so high?   Is it the chicken broth?

    • I used low sodium chicken broth and added very little to no pink Himalayan salt. That should bring the sodium down some if that’s an issue. ☺️

  153. This soup is delicious… I used a bone broth with turmeric instead of the chicken stock. I also added less chicken. This is so good and good for you. I liked the green chilies…a nice added touch. I also put a little more red pepper to spice it up. Super easy and yummy.

      According to the book, you eat the soup for every meal each day, and you eat it until you are full. It’s so lean there is no need to watch your portions. :)

  155. This is my daily go to soup. One pot gives me 2 weeks of lunches. I package into single serve sizes and freeze them. I make mine with a ground up ghost pepper for extra spice and add a package of frozen spinach. Its very good and spicy!!

  158. This is even more delicious the next day!  I’ve been wanting to incorporate turmeric in dishes and this is my first.  I left out the cabbage but still great!  Adjusting the heat to ones liking is easy. Enjoyed the avocado in it also! My new go to soup

  159. How would I make this in a crockpot?

    • Hi Air,

      The only difference for crockpot cooking, is that you need to sauté the onions on the stovetop before placing them in the slow cooker. Then cover and set on low for 5-6 hours, or on high for 3-4 hours. Happy Cooking!

  162. What size pot did you use? This recipe is huge. I like to make enough for leftovers for my lunch; but this seems way more than the average family would need. I can’t image the cabbage would freeze well?

    • I make a variety of vegetable soups with cabbage. It freezes well once it is cooked. Potatoes do not. Turnips are a great substitute for potatoes and they hold their texture when frozen. Can’t wait to try this recipe.

      It should fit in any pot 6 quarts or larger. :)

      • I am making it now and could only fit one quart of stock! Am using a large le crueset pot! Have no idea how I will jam the broccoli and cabbage in but I will figure it out.

  163. It’s a rainy day here in Ga. 
    I had planned on waiting until cooler weather but today was good enough!
    Very hearty soup full of flavors and so very satisfying!
    I would recommend it but if your sensitive to spice and heat you may want to dial it down some way. Otherwise it’s perfect the way it is!!

  167. I absolutely love the original detox soup version immensely; and I must say that when my young man at home is inadvertently glutened (he has Celiac diseas), this soup really helps. He and I both really enjoy the soup even when we’re not on a cleanse. I’m very eager to try this Southwest version. I think we both will love it just as much. I do have one question though…what kind of cabbage did you use in this soup…napa, savoy, green leafy, or bok choy? There are so many different varieties at my local market.

  170. So good!  Spicy but super yummy. I added a bag of frozen okra I had on hand and it was a nice addition but not needed. Makes a nice size pot too! My husband and I can eat it for days.

  175. Love your soup. Just made some today and it turn out great. I replace chicken breast with chicken thigh bit i discarded all the skin and fat. The bone makes the chicken stay juicy and not dry out.

    • Haha this doesn’t mean it isn’t healthy if you dont use organic ingredients or antibiotic free chicken. You should really do more research on organic products certain ones are actually more health hazardous. Unless your growing it yourself nothing is guaranteed.
