Looking for a great Detox Soup Recipe?

A good friend of mine is the founder of Neo Snacks, a producer of organic, paleo, vegetarian, and gluten-free snack bars that happen to taste amazing.

A couple years ago she introduced me to a cleanse concept she and her husband follow on occasion when they need a reset in their health and diet. It’s a Chicken Detox Soup Cleanse from the book Perfect Weight America.

From my personal experiences, cleanses usually involve expensive herbal supplement kits from the health food store, or a whole lot of juicing.

However, this cleanse is different. It’s a nourishing homemade soup with fresh chicken, loads of veggies and ginger, to boost your metabolism and immune system, as well as remove toxins to help your body to work as it should.

It is gluten free, dairy free, and paleo to boot!

Detox Soup Cleanse

In the book, the suggested cleanse structure is to eat the soup alone for several days. It’s so low in fat and calories, you can eat as much as you want.

After 3-4 days you may introduce green salads with raw nuts in the evenings. By the end of the cleanse you still eat the Chicken Detox Soup all day, but may add salmon to your evening salad for a little extra healthy fat.

Lt. Dan and I have done the Chicken Detox Soup Cleanse several times and each time it helps us shed water-weight, a few extra “real” pounds, and sets a precedent for continued healthy eating.

Although this soup is meant to be used as a 10 day cleanse, and you will probably be ready for a change after so many days and bowls of soup, it is a completely sustainable food. In theory, you could live off of it.

With protein, vegetables, vitamins, and minerals, it provides more nutrients than most of the world’s population receives on any given day. So don’t be afraid to give it a try!

My Chicken Soup Recipe

The original recipe in the book calls for all organic ingredients including a whole chicken, and several veggies that aren’t my favorite to have floating in soup.

We’ve made the soup as recommended several times, yet Dan always complains about the recipe. Over time I’ve developed my own rendition that we feel is easier to enjoy for the length of the cleanse… No picking chicken bones and skin out of the soup. No mushy veggies.

My Chicken Detox Soup follows the same principles, yet is tastier and can be made in less time. Even with the changes, it still works like a charm. Why not give it a go?

Chicken Detox Soup

So what’s in MY Chicken Detox Soup?

  • For protein we have chicken breast and some chicken broth. 
  • The vegetables in this soup are onions, broccoli, carrots, celery, and peas. 
  • And for all the flavoring we have olive oil, apple cider vinegar, parsely, ginger, garlic, crushed red pepper, ground tumeric, salt and pepper.

If you see any vegetable in there that you don’t like, switch it out for something you do like.

How to Make Chicken Detox Soup

  1. Set a large sauce pot over medium heat. Add the olive oil, chopped onions, celery, ginger, and garlic. Saute to soften. Then add the raw chicken breasts, broth, carrots, apple cider vinegar, crushed red pepper, turmeric and sea salt.
  2. Bring to a boil, lower the heat, and simmer, until the chicken breasts are cooked through. Then remove the chicken with tongs and set them on a cutting board to cool.
  3. Add the broccoli, peas, and parsley to the pot. Continue to simmer to soften the broccoli. Meanwhile, shred the chicken breasts with two forks, and stir it back into the soup.
  4. Once the broccoli is tender, taste, then salt and pepper as needed. Serve warm.

Chicken Detox Soup

  • Set a large sauce pot over medium heat. Add the olive oil, chopped onions, celery, ginger, and garlic. Saute for 5-6 minutes to soften. Then add the raw chicken breasts, broth, carrots, apple cider vinegar, crushed red pepper, turmeric and 1 teaspoon sea salt.

  1. Usually when I try a new recipe, I make it as stated and will make adjustments if needed. Let me tell you, this soup is AMAZING!! The flavors are just so bright and satisfying!! This will definitely be made regularly at my house! 

  2. So I made this today and I have to say… the flavor is absolutely WONDERFUL! I’m about to go back for a second bowl :)

    However, it took about 45 for the chicken to cook through thoroughly. By then, a lot of the broth had evaporated. I ended up having to add another 2 QT of chicken broth and 2 cups of water.

    But overall, great recipe!

  10. Simply put, this is the best soup I’ve ever tasted. The health benefits of the ingredients are to the moon. First time I’ve used fresh ginger and found that l I love it! Family loves it! I prepared it close to the recipe except omitted onions, added a few fresh cubed potatoes, and doubled the turmeric. Recipe is endlessly customizable to what you have on hand. Thank you for sharing, and your instructions were so helpful.

It’s very delicious and i love it. however i think i may have added too much salt. i didn’t measure the salt just did it to taste. it’s very yummy i’m just worried it won’t be as good for me to eat it all day or use as a detox soup? what do you think? i love it regardless of my mistake i’m just heavy handed xx

  29. I’ve made this recipe just as described. It has been absolutely delicious and insanely filling every time. After thanksgiving and Christmas I made this soup to reset my body. 

    Its so delicious it doesn’t even feel like a detox recipe. I even eat it on week nights just cuz. If you ever want a non-healthy version, add some cream and Parmesan. I was experimenting and it took this to the next LEVEL lol

  31. I love chicken soup! This one looks delicious. With winter coming I am going to be making more soups again and will be trying try this one ASAP.
    I am glad to see people have tried this in a slow cooker. I like to do that as well. That way I am able to enjoy the delicious smell wafting through the house. That’s all part of the cozy, warm feel of winter.

    • I made this in a slow cooker and in my instapot and it came out great both times. I do add the broccoli and peas towards the end.

    • This soup is incredible and I did lose weight eating it but I never felt unsatisfied. I actually doubled the amount of chicken stock ( used no salt chicken stock) and more chicken and broccoli. I don’t measure well 😜 so also added more tumeric and crushed chili pepper ( I like spicy stuff). I highly recommend this recipe.

  53. I made this last night and it’s really quite nice. It does taste better today, after all the flavors have mingled overnight. I used fresh ginger, a titch more apple cider vinegar than the recipe called for and added some curry powder, which gave it a bit more zest. I’ll omit the broccoli the next time and maybe added zucchini instead. Thanks for sharing the recipe.

  55. THANK YOU!!! I am absolutely OBSESSED with this soup… I could eat this forever! While I know my results may not be the average, I have indeed lost 13.5 lbs in 14 days. I’ve made several large batches during the past 2 weeks and freeze them in 1.5 cup size baggies. Definitely my go-to to stay on track. I’ve been pushing more water and tea as well and really feel so much less bloated and also feel that it’s really helping to reset my metabolism. I’d like to shoot for a total of 40 pounds gone by July and this recipe has given me the kick start I needed! The big “60” is nearing in come August! THANK YOU again!

    • Do you just scoop soup in baggie and put right in freezer? Should it cool first?

      • yes, it should be completely cool, then fill baggy. If you have a funnel like used when canning with quart jars, put baggy in small pan , open and insert funnel, then measure soup, being sure to include preferred amount of broth to chunks. Then seal carefully and lay flat in freezer until frozen, then you can stack standing up or stack multiple bags one on the other. to thaw toss in fridge night before or in the morning or set in pan of hot, not boiling water until thawed enough to slip contents into pan to heat up slowly. If you love this concept and find yourself doing it alot check out the SOUPER CUBES on Amazon. You simply fill, freeze then pop them out and stack them in gallon size freezer bags. Grab a cube or two as needed for each meal. Saves freezer space, baggies and lets you prep lots of leftovers for future meals.

  71. This sounds like what the doctor ordered! It is cold and raw today, and I’ve been feeling bloated and sluggish. The only thing is I went to the store and got every ingredient, but driving home I realized I had forgotten the chicken. I’m going to add chickpeas for protein and I think that will be good.   72. Hearty and so delicious! It is also very forgiving, using whatever veggies we have on-hand. This soup is one of our go-to recipes that I make over and over again. Lately I’ve used organic bone broth for even more nourishment.

  77. I have made this soup several times . It is absolutely scrumptious and satisfying. I could easily eat it twice a day most of the time…and I changed nothing. Several friends have also made this soup with fabulous results. Amazingly, they all lost weight while eating it faithfully even once a day with super moderate dieting (as in eliminating alcohol, and sweets and high caloric snacking foods or beverages ) and were not feeling even slightly deprived or unsatisfied. I cannot say how much I love it.( .I think I did increase the turmeric a bit as it was a lot of soup with just a touch of turmeric, comparatively.)

  80. This is so flavorful. I will definitely make this again and again. Love how it’s chock-full of vegetables. So deliciously satisfying and yet so healthy! I only made one addition to the soup. I added a few radishes that I quartered (they were large) and it has a nice potato like texture. So good. Thank you for this great recipe.

  81. I plan to make this but wanted to ask if cabbage would be ok to use instead of broccoli.  I also have never been able to acquire the taste for turmeric, is there anything else I could use?

    • Hi Debbie,

      Yes, you can omit the broccoli and add any veggie you like. Cabbage is a good option! You can also omit the turmeric, however, it is very cleansing and healing. It is added more for health benefits than flavor.

    • Hey Debbie! 

      Just a tip to try with the turmeric – if you brown it at the start of the recipes along with the onion (I’d probably let the onions soften a little first and add the turmeric a couple of mins into browning) it changes the flavour a little… I find it MUCH more palatable when it’s cooked off a little first! 

      • Interesting that you mentioned that, I made the soup today, and added the turmeric, ginger, while sautéing the onions and celery, it tasted really good, my husband gave me tons of kudos!

  85. Even my fussy son loves it. Very tasty, healthy soup, but certainly not fast. Preparation takes most of the time. I have done this recipe at least 6 times and incl. preparation and cooking until finish it might be 2 hours, but it’s still worth it. I freeze some of it for times when we get a cold. If you don’t like it thick just add some more chicken stock.

  88. This was INCREDIBLE!! I normally don’t leave reviews but I’m in love with this soup. I don’t usually like ginger so I was a bit hesitant, but it compliments the soup beautifully. The broth is so flavourful it is the best chicken soup I’ve had!

    I did go a bit lighter on the ginger (2.5ish tbsp), I added some green onions when I put the broccoli in (I’m obsessed with green onions) and I added more chicken broth in as someone suggested and C’EST PARFAIT!! My SO bought me a whole Costco case of chicken broth … so I guess I have to make this again next week 0-:)

  97. Several years ago I found a recipe for weight loss soup and I really enjoyed it, unfortunately I never got around to putting it on a card or in my recipe binder and it got too mangled to read. We just got a very cold blast of winter this weekend and I felt like making the chicken soup and couldn’t quite remember all the quantities of the ingredients. I went looking online to see if I would luck out and find it there. I came across this recipe which looked very similar to the former and voila; I have a new favorite chicken soup complete with detox qualities. I had roasted a big chicken a few days ago and had plenty meat left over so I used that. I had made chicken broth with the carcass and vegetables also so I used that and a carton of broth on hand. With all the vegetables and flavor enhancers I used, this soup was amazing! I won’t have any problem eating this for every meal for a few days.

  99. This soup is fantastic. There is no other way to say it, it’s delicious and has so much flavor. I already can’t wait to make again!

  100. Great recipe. Very flavorful. I make this in an instant pot which makes it super simple. I saute the garlic and ginger with shallots, carrots and celery in the olive oil. I then put in the chicken broth and the chicken and set it to the soup/ stew setting for 25 min. Once finished I shred the chicken in the soup. Its shreds super easily. Then I add the broccoli and peas and let cool. I freeze pint containers of the soup to have on hand.
    I make this every week now.

    • Didn’t 25 minutes in the Instant Pot turn the veggies to mush? I have a chicken noodle soup recipe for Instant Pot and after sautéing the veg 7 minutes is perfect. I’d prefer using IP but I don’t want to ruin it.

  101. I’ve been trying to eat clean for about a month and a half and seemed to have plateaued so I started looking for something new to kick start it back into gear. I love chicken noodle soup, so I gave this try. It did not disappoint! I didn’t even miss the noodles! I did not follow it for all three meals. I had my regular breakfast of eggs and grapefruit. I have not stepped on the scale yet, but I did eat it up in three days so I’m making a bigger batch today and will try to eat it all three meals to see if I lose any weight. If I remember I’ll check back in after a week to share my results. But it was delicious. Even my husband liked it – which he is a complete food snob and never likes anything I make.  I’m not worried about the sodium since I am eating clean and I’ve heard you should add more salt to your diet cause natural foods don’t have as much sodium as your body needs to feel good.  I’m not sure how accurate that is. I have been waking up energized and keeping that energy all day.  Also I’d like to add it was delicious each time I heated it up in the microwave. Tasted fresh and not soggy at all. I didn’t have time to freeze any. It was gone that fast! Thanks for the recipe! 

  102. Love this recipe!  Not interested in detox, but it’s a super-healthy boost.  Warning: if you are a novice, it takes much longer to prepare everything when you are hand chopping everything. At least an hour to prep.  But well worth it because the soup is delicious.  Thank you for sharing!

      It’s hard to give exact nutritional values on recipes, because all the tools available to us give slightly different readings. The nutritional facts listed as at the moment are coming from a newer built-in plugin, and should be close to accuarate.

  107. I used for vegetables: onion, Can green beans, mushrooms, and cabbage. I had no ginger so I added power ginger. Rotisserie chicken. And completed the rest of the recipe ingredients and amounts. Less cook time. Yum! Thank you!

    • just a hint….don’t use canned beans…too much sodium. Alway try and use fresh vegis for making soup…sometimes the clearance shelf in the grocery store is stocked full of vegis waiting to be soup. Enjoy!!

      Yes, that is the only ingredient that could be the culprit. Feel free to use low-sodium or homemade chicken broth.

    • I make a variation of this soup & make my own chicken broth out of it by adding hot water, garlic, onions & sesalt to the already cooked chicken & let simmer. I add the last of the ingredients immediately after.

    • Use low-sodium or unsalted chicken broth and you can eliminate most or all of the sodium! Just add in your desired amount of salt to taste.

  114. This was great…I had to swap out/omit veggies to make it low FODMAP so I used carrots, bok choy, edamame, parsley and a can of fire roasted tomatoes. Plus I added a homemade curry powder that gave it a spicy kick. Next time I want to add some extra greens like kale or collards. Good with a little avocado diced on top (probably not great for the cleanse).

      Yes, just soup the first few days, but as much as you want. Then you can add in lean salads with grilled salmon in the evenings, if you want to add on a few more days of soup throughout the day.

  133. I just made this soup following this recipe almost exactly. I forgot to get apple cider vinegar but it was still delicious without it. Full of flavour from all of the vegetables, ginger, garlic and turmeric. I also added bean sprouts and lentils. Very Filling and I’m planning to have it for the next few days.

  134. PROS: Easy to make, may be one of the most delicous and healthy soups I have ever had.  CONS: One big con: Only good for one day. The next day the soup did not taste good and a lot of ingredients went in the garbage. I made the recipe as it was written as I planned to eat it for a few days. Actually, even several hours after making it, I decided to have another bowl as it was so magnificent for the first bowl; already it was loosing its flavor. SUGGEST make it for a fairly large group so it is finished in one meal.

  139. Love this recipe. I make this weekly and eat it for lunch & dinner during the week. It has definitely help with my weight. I use my instant pot instead of stove top method. I add more seasonings than what is listed as well as lemongrass. I omit the peas, but also add kale, collard greens, mustard greens anything green. I layer them all in my instant pot. Pressure cook for 15 minutes & it comes out perfect.

  162. Thanks for publishing this recipe. I was pleasantly surprised. I was searching for a healthy soup that didn’t contain cabbage. I have no idea why I made it because 1) I thought the ingredients were too simple to be flavorful, 2) I’m not a big fan of ginger and 3) I am honestly not sure what turmeric tastes like. I will definitely make this again and exactly as written. Next time, though, I will pay closer attention to the broccoli. It overcooked while I was waiting for the chicken to cool down.

  163. This is my first time making this soup. It is wonderful and while I absolutely LOVE the broth, there is far too little of it. I need to increase the broth but don’t want to water down the flavor. Any ideas on how to capture the flavor with chicken broth? Is it just ginger, ACV & red pepper flakes giving it that sour-ish, spicy flavor? If anyone has a recipe, pls share! TIA

    • Hi Karen!

      It sounds like it simmered a little too high. You can certainly add extra chicken broth or water and the beginning of the simmer time, so it is infused with flavor. Or you could also, turn the heat a little lower next time and see if you are satisfied with the amount of broth.

  179. This is a great recipe. I’d use it as a chance to educate your readers as to why you suggest the ACV and homemade bone broth using grass fed bones and organic veggies, pure water over organic chicken broth (which still may have natural flavors in it and who the heck knows what that really means! The packaged broth may also not necessarily use grass fed bones, the org. chickens may still have been fed soy, and the water they use may still be fluoridated and chlorinated). The ACV pulls the nutrients and the marrow from the bones right into the soup. Kettle and Fire is a great company and scrupulous with the products they use but Swanson would not be as much. The recipe is delicious.

    • Hi Dani!

      In theory, yes, but I have never personally tried that. I actually don’t think it would cook any faster, when you factor in the time the pressure cooker takes to build pressure before cooking. However, if you want to give it a go, I would probably sauté the veggies, then set to Pressure Cook High for 15 minutes. :)

I’ve recently become a big advocate of knowing exactly what I’m ingesting so buying the usual Campbell’s Chicken Noodle was not an option; however, I didn’t want a recipe that required a slow-cooker as my patience was limited when sick. I came across this recipe, and boy… did I find a winner!

    I’ve made this soup twice in two weeks! I was even more excited that a large number of vegetables in this replaced noodles, so I still had a great veggie intake. Staying full was not an issue, and I noticed a little bit of weight loss too! I’m so glad I have a homemade go-to recipe when myself or anyone else around me need a soup remedy! 5/5!!!

I’m trying to eat healthier cause my son has IBS, Alepicia and gets hives.  I tried a recipes the other day and it sucked. This is what usually happens when I try healthy meals. I decided to give this one a try and I LOVED it.       For all the details you’ll want to get the book mentioned in the post. However, you pretty much eat the soup as many times a day as you are hungry, for ten days, and drink only water and unsweetened herbal tea. The book mentions adding in salads and grilled salmon the last few days for dinner. This helps you get a little extra healthy fat. Good luck!!

  264. I just made this soup.  Delicious!  I added a little more garlic just because I love garlic.  I am not doing a cleanse, pre se, but I am trying to eat less carbs, and this looked like a great soup for that.  Really, really, delicious!

      You would have to read the book for the full breakdown and explanation. But because the soup is so lean, you can eat until you are full. I’ve done this multiple times now and never really measure my soup intake. Hope this helps!

  274. I just made a double batch and have had my second bowl today. It’s delicious! I replaced the frozen peas with chopped fresh zucchini and left out the red pepper flakes. I also added a little more turmeric. I also chopped my chicken pretty rather than shredding it- it was taking too long. Plus, I thought it would be more evenly spread throughout the soup. It is pretty thick- not much broth. Should I add more broth or water?

  275. Made this tonight and did not deviate from the recipe, which is unusual for me! It was fabulous! The whole family loved this! Even my picky puppy was drooling and begging for some! I think fresh ginger and garlic are a must.
    I recommend doubling the recipe to have leftovers. It is definitely on the rotation list. Next time, I will make enough to freeze! Thank you!

  288. I made this soup today. It’s fabulous! I only added 2 ingredients: spinach and leeks. I thought it was going to be bland with no seasoning on the chicken, but it’s flavorful. I will make this again. My family likes it.

  303. I just made this last night and had to stop myself from getting a second helping it was so good! I followed the recipe to the letter, except I only used 1lb of chicken instead of 1.5 (that is how it was sold in the store). The ginger and spices make you feel like you’re detoxing, which is amazing. Filling, savory, healthy, I couldn’t ask for better. This is one for the books and one I will be sure to make over and over again this winter. Thanks!

  304. Made this soup as directed, except didn’t have any sea salt. This soup is delicious. To think it is also healthy is just a huge plus. I have eaten only the soup for 24 hours. So anxious to see what the results are about 3 or 4 days from now. Hubby loves the soup also, so I will be making an additional batch tomorrow. Fingers crossed that this works to get a weight-loss jump start. Delicious,  healthy, and effective would make this a win-win-win

  308. The soup is delicious! My son has football weigh-in tomorrow and has been on a strict diet for 2 weeks. This was a very welcomed treat, as opposed to eating another salad. 10yr old aproved…then it’s going on our meal list!

    • Hi Jennifer! You can make this is the crockpot, but I might soften the onions and celery in a skillet first so they don’t end up with a rubbery texture.

  313. Love this soup. However, to cut sodium, I used a quarter of low sodium chicken stock and a quarter of filtered water and I eliminated the extra salt. Also added a cup of chopped kale. Yum!

    I tend to cook everything I eat pretty bland and I am wondering about the turmeric and ginger. How strong is their flavor in the soup? 

    • It isn’t very spicy. In fact, I usually add more seasoning for more flavor. Not a huge fan of ginger myself so I was unsure about using it but it’s really tasty.

  342. This was SOOOOO delicious! It had so much flavor, you would never believe it’s so healthy! Only had ground ginger, so I used that, maybe about 2 1/2 tablespoons, and I had to add a little extra EVOO to stop the ground ginger from burning in the beginning.

    • Your veggies would be complete mush. I would cook the chicken with the broth, spices, and onion in the crockpot until the chick can be shredded. Shred the chicken, then put the chicken and veggies in the pot cook and cook for probably about and hour until R the veggies reach the softness you want

    • Hi Chris! The ginger is an important component for detoxification. However, you can try adding other  ingredients that are know to detox… Lemongrass, cilantro, cabbage, kale are a few.
