Here we are using a simple combination of small tender baby potatoes cut in half or quarters, then tossed with herbs and our “secret combination” of cornstarch and baking soda. How to Make Crispy Potatoes in the Oven

  1. Preheat the oven and set out a large rimmed baking sheet, a large mixing bowl, and a small bowl. Cut the potatoes into halves (or quarters for the larger potatoes) so they’re all close to the same size.ย 
  2. Next, place the chopped potatoes in the large bowl. Pour the olive oil over the top of the potatoes and toss well to coat.
  3. In the small bowl, combine the cornstarch, baking soda, and spices. Mix well.
