Here we are using a simple combination of small tender baby potatoes cut in half or quarters, then tossed with herbs and our “secret combination” of cornstarch and baking soda. The baking soda helps pull the moisture out of the potatoes as they cook to create a fluffy interior and dry crispy exterior. And the addition of cornstarch gives the potato skins a lovely crispy texture.
We’ve seasoned the potatoes with a classic blend of Italian seasoning, garlic, onion, salt, and pepperโฆ But you can mix things up with various spices to suit your tastes.

Ingredients You Need
- Potatoes – like mini baby Dutch yellow, yukon gold potatoes, or small red potatoes

How to Make Crispy Potatoes in the Oven
- Preheat the oven and set out a large rimmed baking sheet, a large mixing bowl, and a small bowl. Cut the potatoes into halves (or quarters for the larger potatoes) so they’re all close to the same size.ย
- Next, place the chopped potatoes in the large bowl. Pour the olive oil over the top of the potatoes and toss well to coat.
- In the small bowl, combine the cornstarch, baking soda, and spices. Mix well.
- Then sprinkle the seasoning mixture over the top of the potatoes and toss well to coat.
- Drizzle the remaining oil over the baking sheet and spread the potatoes out in an even layer.
- Roast the seasoned potatoes in the oven for 15 minutes. Then carefully flip them over and roast for another 5 to 10 minutes, until fork tender.

Be sure to coat the potatoes in the oil and spices thoroughly, and spread them evenly on the baking sheet in a single layer. For the crispiest potatoes it’s important to not overcrowd the pan! If the potatoes are touching or overlap, too much moisture builds up and causes the potatoes to get soggy.
Cool the leftovers completely before transferring the roasted potatoes to an airtight container. They’ll keep well for up to 4 days in the refrigerator.
You sure can! Let them cool before transfer to a freezer-safe sealed container or plastic ziploc bag. Freeze for up to 3 months and thaw in the fridge overnight before reheating.
Spread the potatoes out on a prepared baking sheet and re-roast them for 10-15 minutes, flipping them over once halfway through cooking. You can also reheat them in an air fryer, similar to french fries.

Instructions
