The combination of cottage cheese and oats makes a lovely flavor and texture… It is a bit tangy like traditional white bread, but with a hearty nutty taste from the oats. To get that fluffiness and light bread-like sponginess, we simply blend all of the ingredients together in a food processor to create a thick, pourable batter. Easy-peasy!

However, you can make a sweet or more savory version by adding spices, if you like. Consider adding an additional tablespoon of sugar and 1/2 teaspoon of cinnamon for a sweet variation. Ingredients You Need

  • Cottage cheese – full-fat yields the best bread texture and taste
  • Old fashioned rolled oats – extra thick or regular, but not quick oats
  • Eggs – room temperature is best for baking
  • Olive oil – or other neutral-tasting cooking oil like canola, vegetable, or avocado
  • Baking powder – a bit to boost the fluffy crumb
  • Granulated sugar – gives the bread a nice, light sweetness
  • Salt – just a pinch, essential for baking flavorful bread (kosher salt or sea salt)

How to Make High-Protein Cottage Cheese Bread

Preheat the oven to 350ยฐF. Set out a 9 x 5-inch loaf pan. Trim a piece of parchment paper to fit across the bottom and long sides of the pan. Press the parchment paper down into the pan, and fold the paper over the sides.

Use 1 tablespoon of olive oil to grease the short sides of the pan to hold the paper in place.

Set out a large food processor. Place the cottage cheese, rolled oats, eggs, remaining 1 tablespoon of oil, baking powder, sugar, and salt in the food processor.

Bake for 60 to 70 minutes, until a toothpick inserted deep into the bread comes out clean. If the top starts getting too dark in the last 10 to 15 minutes, cover it loosely with foil.

Allow the bread to cool for at least 10 minutes in the pan. Then use the sides of the paper to lift the loaf out of the pan gently.

Cool to room temperature before cutting with a sharp knife to serve.

  • Slice with a serrated knife! This bread is soft and fluffy, so gently slice it with a serrated knife so you don’t squish the loaf.
  • You can add nuts or dried fruit if you’d like! Or, sprinkle them on the top instead of the oats like I did.
  • If the outside of your loaf is getting too dark before it is done in the middle, lightly tent a piece of foil over the top!

Cottage Cheese Notes: If the brand of cottage cheese you buy is thick, use it as-is. However, if you buy a brand that has a lot of liquid in it, I suggest draining off the extra liquid before adding the cottage cheese curds to the food processor. This will help the bread rise and stay fluffy after baking.
