Why We Love Cottage Cheese Bread
Trying to cut back on wheat? We’ve got you covered! This amazingly tender Cottage Cheese Bread is a gluten-free and high-protein bread that is super satisfying. Perfect for when you are trying to watch your diet but still want something that feels carby and comforting. No wheat flour or active dry yeast is needed.
The combination of cottage cheese and oats makes a lovely flavor and texture… It is a bit tangy like traditional white bread, but with a hearty nutty taste from the oats. To get that fluffiness and light bread-like sponginess, we simply blend all of the ingredients together in a food processor to create a thick, pourable batter. Easy-peasy!
This no-knead recipe is fabulous as an all-purpose bread… Use it for sandwiches, toast, and any yummy way to enjoy slices of bread.
However, you can make a sweet or more savory version by adding spices, if you like. Consider adding an additional tablespoon of sugar and 1/2 teaspoon of cinnamon for a sweet variation. Or add 1 teaspoon garlic powder and 1 tablespoon of Italian herbs for a savory version. Either way, the bread “dough” comes together in mere minutes andย bakes in only 1 hour.
Ingredients You Need
- Cottage cheese – full-fat yields the best bread texture and taste
- Old fashioned rolled oats – extra thick or regular, but not quick oats
- Eggs – room temperature is best for baking
- Olive oil – or other neutral-tasting cooking oil like canola, vegetable, or avocado
- Baking powder – a bit to boost the fluffy crumb
- Granulated sugar – gives the bread a nice, light sweetness
- Salt – just a pinch, essential for baking flavorful bread (kosher salt or sea salt)

Bake for 60 to 70 minutes, until a toothpick inserted deep into the bread comes out clean. If the top starts getting too dark in the last 10 to 15 minutes, cover it loosely with foil.
Allow the bread to cool for at least 10 minutes in the pan. Then use the sides of the paper to lift the loaf out of the pan gently.
Cool to room temperature before cutting with a sharp knife to serve.
Tips & Tricks
- Slice with a serrated knife! This bread is soft and fluffy, so gently slice it with a serrated knife so you don’t squish the loaf.
- You can add nuts or dried fruit if you’d like! Or, sprinkle them on the top instead of the oats like I did.
- If the outside of your loaf is getting too dark before it is done in the middle, lightly tent a piece of foil over the top!

How is this for sandwiches?
Hi Cindy,
It makes great sandwich bread. Give it a try! :)
I have made this bread twice and it basically deflated and caved in both time. Any thoughts on what is causing this?
Hi Jenny,
Sorry about that! My loaves rise high in the oven, but the top sinks a little after baking. But it shouldn’t fully cave in. I’m wondering if the brand of cottage cheese purchased was more on the liquidy side… I would probably try another brand, or drain off the extra liquid before blending it.
Hi! What can I substitute the eggs with?ย
Hi Aman,
Unfortunately, the eggs are what lift the bread and hold it together. There’s not really a good substitute for them that would work in this particular recipe. You could try “chai seed eggs” but I’m afraid the results would not be the same.
Mine as well. It sank when cooled. Did I stir it much maybe?
Turned out beautifully! Very tasty, moist tender crumb. Thank you!
Can I use low fat cottage cheese?
Hi Jessica!
You can, however, the texture is better with the extra fat.
I’m so glad I found this recipe!! The flavor of this bread is amazing and I love how it is high in protein!
This is great with whipped cream on top or when paired with tea! Our fave combos!
LOVE this!! This bread has the best texture and love all of the added protein. It held up perfectly for my kids sandwiches too.
